Buttermilk chocolate chip muffins



Hubs is in Vietnam which makes me one lazy woman.. not really in the mood to bake anything.. no one to tell me off when i bake something simple.. call me sadist lol but bec of his constructive critism.. i manage to try out a much more challenging recipes and without my readers trying out some of the recipes in my blog.. i wouldnt hv the motivation to keep on trying.. so thank you all for visiting and for trying it out!


Strawberry Oreo Chiffon cake recipe was adapted fm my previous post.. i found Oreo with strawberry cream and quickly got myself strawberry yogurt to compliment the taste.. i decided to add raspeberry paste instead of strawberry to gv a stronger taste.. hubs likes it alot but commented that it tastes somewhat artificial.. hmmm .. Sonia on the other hand loves it.. so gv this recipe a try if u havent cos this chiffon cake recipe is sure a keeper!


Anyway during the last week of school hols.. my kitchen was invaded by not one but three kids lol.. i love having kids baking away in my kitchen.. its fun and usually when there are more than one Sonia.. I tend to forget stuff.. this time around i had forgotten to let them add sugar and also eggs! arghhh.. whats up with me! look at the end product of their muffins lol.. it looks.. err..  not their fault really!


Danish carefully placed the muffin pan in my oven.. his first time ever! All three took turns to mix, scoop and place the tray in the oven.. 


The moment their chocolate muffins came out of the oven.. all three kids started munching on it.. mom and dad came too so of cos they got one piece each and within a few sec.. i saw that look.. the look of "yukie" on all of their faces muahahaha.. muffin was bitter and blahhh.. dad finished it and we all started laughing when mom said.. "ahhh if u wanna bake something for ur dad .. bake this muffin!" hahaha


I quickly did a second batch .. this time alone .. and within half an hr .. a perfect batch of muffins were baked.. they were gone just when i took them out of the oven.. i managed to put aside a few for them to bring home.. moral of the story.. am not fit to be a teacher .. just YET! hahaha

Ingredients
2 1/2 cups all-purpose flour
1 cup packed brown sugar
1/3 cup baking cocoa
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1 1/3 cups buttermilk
1/3 cup butter, melted
1 1/2 teaspoons vanilla extract
1 1/2 cups dark or white chocolate chips

Method
- Preheat oven to 190°C/400°F – Line at least 18 muffin tin cups
- Mix the flour, brown sugar, cocoa, baking soda and salt in a large bowl using a whisk.
- Mix the eggs, buttermilk, melted butter and vanilla extract in another bowl. Use the same whisk to whisk them together.
- Stir the dry ingredients into the wet until just mixed.
- Fold in the white chocolate chunks.
- Fill the muffin cups until almost full (if you want them to achieve a proper muffin top)
- Bake in oven for 14-18 minutes until cake tester inserted into the muffin comes out clean.
- Cool for 5-10 minutes in pans before transferring to a wire rack to cool completely.

Rima,

Jannah panggil chiffon cake....cake roti and she luvs chiffon to the max. Hari ni dia suruh I buat lagi the pandan chiffon.....sadly telur cuma tinggal 2 biji jer pulak (malas nak pegi supermarket). Tgk lah besok2 mcm mana hehehez :D Maybe ada chance to make this muffins instead.....

Salam Kak Rima,

R u sure that u r not fit to be a teacher..? OR may b just a forgetful teacher on occasion.. Hehehe.. D same thing happened to me once, when I was trying to get my daughters to help me out in d kitchen.. Nak Cepat, langsung jadi lambat.. I end up prefer to work alone in d kitchen..
U r a good teacher already, as u could pass on knowledge on baking to others..

Just love d looks & color of d chiffon..

btw i nk mntk ur advice la, i nk buat butter pound cake tapi i nk buat dlm papercups yg kenit2 ..for cuci mulut majlis kawin la so which resepi yg i shud do yg bole tahan 2 days b4 di mkn.. really appreciate ur help..tks.. :o)

Both my kids memang suka chiffon.. Tdy I masuk kan one slice of this chiffon inside her lunch box.. Ku masuk kan raisin bread also lesap.. Gagah gagah hahaha

Hi Rima,
reading ur post made me realize tht iam not the only one in the boat.as my little one n her friends r in a phase where they love to bake anything n everything!managing them with oven gives me goosebumps at times.
well last tuesday it was the recipe of best ever banana muffin frm ur blog.iam so glad i found the perfect muffins with it.n most of it was done by the little one.thks dear.
this recipe too sounds delicious!beautiful pictures as always.

muahhaha...ku terketawa reading the kid's muffins minus the egss & sugar tu coz i pon ever made choc muffins minus the sugar..pahit uuuu!!!hahaha..tu lah i buat tengok recipe pon ku lupa nak letak sugar!

nyways, i dah buat the chiffon cake blueberry version..it's soooo yummy and moist..tak terbegik punya..i loved it..cuma ran out of purple kaler, so letak apa yg belen aja..in the end the kaler tak menyerlah..still purple, but dalam pic jadi brownish...tak jadi ku nak posting..tapi the taste gosh!!! sedappp...i will make it again!

Buttermilk tu susu yg kental errr macam mana nak explain ahhh.. Cuba google.. U will know what I mean.. U can do it urself ajer.. Letal 1tbsp of lemon juice or vinegar in a cup then u fill up the cup with milk.. Kira 1 cup milk n 1tbsp of lemon juice = 1 cup of buttermilk

Hehe I use Wilton gel for bright pink colour plus if u use raspberry paste u get a pretty colour n shiok taste

Kesian lah budak budak tu.. Dah lah penantian satu penyeksaan dah tu ku pakai Valrhona cocoa powder.. Pahit banget jadinyer

If pasal colour purple ni.. I teringat buat kek lapis blueberry.. Letak purple colouring.. Jadi macam grayish pun ader.. Fm then ku tak nak lagi Guna kan yg liquid.. I trust the gel/paste type.. Wilton brand.. Letak sikit dah menyala hhehehe

hehehe dulu waktu Hairi small.. i also macam u.. if dia masuk dapur waktu i bake ker.. dgn cepat i chased him away.. not now.. not anymore.. i think the best way for u to teach ur kids is by letting them touch things.. am hoping that with my blog and letting her learn how to bake .. she will be a good baker..

Hi Rima,
I would like to ask some advise on using Kitchen Aid mixer. I recently purchases a Artisan 150 model tough i feel like my cakes don't come out fluffy like they used to when i was using a hand mixer.
Can you share what speeds you use to beat the butter and sugar and then when you mix in eggs and flour and the rest?
Really appreciate some guidance.

SOrry for my late reply.. i usually will use med/high speed to whisk my butter and sugar.. for eggs i will whisk it one at a time.. lowest speed first and then med speed .. for flour i usually will fold in using my spatula unless a recipe calls for flour/milk/flour/milk/flour type in which case i will use med speed..

Okay. Thanks. Anyway, i used to bake chocolate cakes and it turns out soft and moist. But recently, the cakes that i baked are all dry and hard though i followed the recipe to a T. May I know what's the cause of it? Thanks in advance.

Hmmm oven setting can be the cause... over mixing can be the cause too.. i am not too sure what is the real cause cos i dont know what recipe u using :o(

Hi Rima. I'm Lyla. Thank you for the recipes posted. This morning I made the milo oreo jelly and it's fantastic. And now I'm baking buttermilk choc chips muffin and the mixture tastes bitter. Kenapa agak nya eh?

hmmm bitter? what kinda of cocoa powder did u use? did u sieve ur baking soda properly? ur buttermilk .. did u buy it fm the store or u did it urself?
