Everyone loves this cake.. the softness... the taste.. the sweetness is just right.. will definately be baking this cake again and again.. ty bro rozzan for sharing this wonderful recipe :op





Ingredients
270g butter - I used unsalted butter and add 1/4tsp salt
250g Hong Kong flour
230g caster sugar
10g cocoa powder
6 large eggs
2 tbsp condense milk
1 tbsp ovalette
1 tbsp tap water
1 tsp baking powder
1 tsp vanilla / vanilla powder
1 tbsp black forest paste - i added.. u can use chocolate paste if u want
Nutella spread


Method
1) Beat butter, milk and vanilla together and beat until fluffy. Set aside.
2) In another bowl whisk eggs, ovalette, water, baking powder, flour and sugar into a mixing bowl. Beat until fluffy and thick.
3) Combine batter A and B. Mix well.
4) Remove the 1 / 4 of batter and mix with cocoa powder and black forest paste. Stir well.
5) Prepare greased cake tin measuring 8 x 8 inches
6) Add 3 scoops of plain dough and a scoop of cocoa mix, and repeat this method until all the batter are use.. marble it ..
7) Bake cake batter in oven at 180C for 45-50 minutes.
8) Let the cake cool before slicing it into two parts..spread with Nutella. Leave in fridge for a few hrs or a night bef serving.

Ingredients
600 gr Butter and margarine - I used Anchor unsalted butter
30 egg yolks
2 egg whites
250g caster sugar
100g flour
3 tbsp sweetened condensed milk
1 tbsp vanilla extract
1 tbsp seasoning spekoek
100g mixed fruit - I used 200g
30g walnuts - I didnt use

Method
1. Beat sugar and egg white until fluffy. set aside
2. Beat butter, vanilla extract and sweetened condensed milk until pale white
3. Add flour and spekoek to egg mixture, little by little while stirring with a spatula until the average - i used low speed to mix it
4. Add whipped butter mixture and stir well.
5. Prepare greased pan 20X20X7 cm..
6. Each layer weigh 82g.. i got 22 layers out of my batter.. each layer u baked 7 mins, 175C using grill mode or bottom fire..
7. Last layer bake using upper and lower fire at 160C for 10-15 mins

No updates.. had a busy weekend but that doesnt mean i didnt bake anything.. friday i took Sonia for a train ride to papa's workplace.. she is super excited when it comes to train rides cos her mama is too lazy to take a train anywhere.. i hv no issues if ppl are courteous enough to gv a toddler a seat but it pisses me off if someone just pretends to close their eyes aka "sleep" even tho they know theres a toddler right infront of their nose! haizz dont know why some err most S'poreans behave like that :o(

Last Saturday we decided to stay in and do our typical weekend housework and only went out for dinner.. I was down with very bad gastric flu cos typical me.. i had forgotten to eat anything the night bef.. soooo lesson learnt.. eat something even if its small.. anyway.. on Sunday since i was still recovering fm gastric.. i decided to stay in and called sis Lyn's kids to come by to play with Sonia.. they stayed till late.. mom and dad came by.. my cousin, sis Rita came by with her hb and son.. in the end our house was full with guests and what did i baked in time of emergency?? Congo bars hahaha

I had baked macarons the night bef and had a few slices of my mousse cake.. so desert wasnt an issue.. i cooked soto and baked pizza for dinner.. no pic of pizza, no pic of soto and no pic of congo bars cos i dont take pics of food that i cooked :op

Today i managed to bake two types of cake for Eid.. which i will be posting tmrw cos right now i am really kaput.. half of my day today was "dedicated" to clean Hairi's room cos that boy... sighhhh... dont know what to say.. hes 20 and he can be a pain.. u know how boys can be and i am too tired to even nag at him anymore.. long story short.. i managed to do what i had wanted to do today.. the only thing that i didnt get to do is to take pics of my bake today.. i promise i will try to do it bef i go to my moms place for our typical eve of Eid family reunion dinner tmrw.

Hb's fav cake... hes a big fan of mousse.. moist... creamy (not buttercream of cos) kinda cake and since hes home i thought what better than to bake him his fav cake.. wink wink - "babe.. my bday coming u know" muahahahha.. no lah.. its more abt me feeling guilty for not been baking him his all time fav cake.. :o)





Marvelous recipe is fm Elkaje.. got to love the desert recipes in her blog.. the cake itself is so so soft that when u eat it.. the whole thang just melts in ur mouth.. the mousse is ohhh so so yummeh.. felt as tho ur eating ice cream.. both Sonia and I had 3 slices already.. burp hehehe





Ingredients
Chocolate sponge cake
5 egg yolks
2 egg whites
40g sugar
30g flour
10g corn flour
15g cocoa powder - i used valrhona
65g margarine - i used unsalted butter
1/4 teaspoon baking powder
pan 20X20X4 cm

Coffee Syrup
1 tsp instant coffee - i used 1 tbsp
2 tbsp granulated sugar
70g water
2tbsp rhum - I used vanilla extract

coffee mousse
1 tsp instant coffee mixed with 1 tbsp hot water
75 g heavy cream - I used double cream
100 gr White cooking chocolate - I used Marmer white couverture
2 LBR gelatine, soak in cold water - i used 4g gelatine powder dissolved in a little hot water - stir
150g heavy cream, whipped until fluffy

chocolate mousse
75g heavy cream - i used double cream
100g Dark cooking chocolate - i used marmer dark couverture chocolate
2 LBR gelatin, soak in cold water - i used 4g gelatin powder
150g heavy cream, whipped until fluffy - I used double cream


Method
Sponge cake
1. Beat sugar and eggs until fluffy and thickened
2. Sieved flour, cornflour, cocoa powder and baking powder
3. Fold in flour mixture gently till well combined
4. Fold in melted butter and mix well
5. Pour batter into greased pan and baked it for 15mins .. 175C
6. Sliced cake into two part and set it aside


Method for both mousse
1. Heat the heavy cream
2. Add into white cooking chocolate and let it sit for 5 mins bef stirring.
2. Add in gelatin and stir till combined.
3. In another bowl, whisk heavy cream till fluffy.. add chocolate mixture into heavy cream and stir gently - place in fridge.

For coffee mousse
Same as abv except u add ur coffee mixture after u add the rest to whipped cream.


Assemble
- Place a piece of sponge cake in a ring pan (pan without base) square size 20x20
drizzle cake with half the coffee syrup
- Pour coffee mousse
- Cover with chocolate sponge cake
- Sprinkle cake with remaining coffee syrup
- Pour the chocolate mousse
- Let it sit in fridge overnight or at least for 4hrs bef serving.

Thank you for all the well wishes.. Sonia no longer has flu but i think shes begining to develop a slight fever.. shes a little fussy today but thats ok.. she's still playing and singing and talking non stop :o)


Hb got home safely and I on the other hand hv been busy since the day he left for Vietnam.. I got to finish up all my ironing - yayyyy.. i managed to do what i was supposed to do since last week.. i also got to take Sonia out and do what most mothers will do with their little princesses.. overall we were good..





This morning I managed to bake the kuih that i hv been eyeing for the longest time.. the thing is.. hb doesnt really know how to eat this type of kuih and to bake it when hes around doesnt make sense.. I knew mom and dad loved this type of kuih so when dad gave me a loaf of bread last night.. i decided that i shud gv this recipe a try eventho i knew today is gonna be another busy day for me.

Mom and dad came by just on time when i took it out of the oven.. dad was eyeing it and i quickly sliced it a few mins after it was baked.. he ate and at the same time commented that its was super yummy.. i guess hes either hungry or hes a super big fan of this binka lauk.. hehehe..

Anyway i cant stay long.. ty Cik Mat for sharing this wonderful recipe.. we all loved it err except my super duper hb who didnt even get to taste it cos it was gone even bef he could take a peep hahaha





Ingredients
10 to 12 slices of white bread - I used 10pcs
800ml coconut milk
3 tbsp flour
3 tbsp butter - melted
3 eggs
Salt to taste

Fillings
400g minced meat
2 large onions, chopped
1 large potato, peeled and diced
1 large carrot, diced
2 cloves garlic*
1/2 inch ginger * (* finely ground)
3 tbsp meat curry powder
3 tbsp tomato sauce
3 tbsp chili sauce
500ml water - I used 250ml
Black pepper (optional)
Salt to taste

Topping
Chopped coriander
Sliced green onions - I didnt use
Sliced red chillies
Fried onions

Method
Binka Bread
Preheat oven 190C.. greased a 10 x 10" pan (I used 9*). Set aside.
Sliced bread into small cubes and soak in coconut milk.. once soften add all ingredients except salt, and mix well. Season with some salt. Pour into baking pan and bake for 30 mins.

Fillings:
Heat oil in a skillet, saute onion, pounded ingredients until fragrant, add curry powder, tomato sauce and chili sauce. Stir well.. add meat, potatoes and carrots. Pour water and cook until potatoes and carrots soften. Add salt to taste and cook until dry. Add black pepper. Leave to cool.

Remove bread binka from oven. Press top lightly. Top it with fillings and continue to bake for a further 30mins. Let binka cools down bef u sprinkle with toppings.

Sonia has flu... I hv terrible headache.. why am i still awake? i dont know.. :o(





Hb is urgently needed in HCM tmrw morning.. so hes taking the first flight out and will be home in 2 days time.. sigh... i better be fit for the sake of Sonia..





Ingredients
- 200g margarine - add 1 tbsp butter ( I used 200g unsalted butter)
- 200g palm sugar
- 6 egg yolks
- 2 egg whites - whisk till stiff peak
- 200g flour
- 2 tbsp full cream milk powder
- 1/4 tsp salt (I added)
- 100g dark cooking chocolate - chopped (I used valrhona, 64%)
- 3 medium-size banana (600g) - mashed (i used 1 cup)
- 1/4 tbsp double acting baking powder (i used 1/2 tbsp)
- 3 or 4 drops of banana essence ( i used 2 drops)
- raisins, almonds, cherries or cheese for topping (I used sultanas and chocolate chips)

Method
Preheat oven 175C.. grease pan
Beat margarine and sugar till light and pale in colour
Add in egg yolk one at a time and continue to beat till well incorporated.
Fold in sifted flour, milk powder and double acting powder
Gently fold in stiff egg white and continue to mix till well combined
Add mashed banana and chopped chocolate - stir well
Lastly add banana essence..
Pour batter into baking pan and sprinkle with currants or cherries or almonds or just cheese according to taste
Bake for 35 minutes or till done.
(I used a 8x8 pan and baked it for an hr)





Anyway, I hv baked this cake bef and am still loving it.. bake it and i am pretty sure u will love it too :o)

Ok lets move on fm my previous post :op.. i had wanted to bake this kuih bakar ever since i saw it at mek siam aka Ijah's blog.. finally with little time in hand, i managed to bake it this afternoon and the person who ate most is Hairi and my super duper hb.. hes a sucker for this kuih lol.. not a big fan of kuih bakar lauk tho .. his loss hahahha..

Well ok peeps.. hv a good week ahead.. heres the recipe again :o)



Ingredients
1 cup sugar
1 cup pandan juice - (i used pandan paste and water)
2 cups plain flour
1/2 tsp salt
3 eggs
2 1/4 cups coconut milk (450ml)
2 tbsp butter
a few drops of green colouring
sesame seeds

Method
Blend all ur ingredients- put aside
Add 2tbsp of cooking oil in a 10" pan
Preheat oven and place ur pan in it. Once u see the oil heated, pour in batter, top it with sesame seeds and bake it at 175C for 90mins.. if u want ur kuih bakar not to hv crust.. u can bake it for an hr or till batter is baked... (previously i baked it for 45 mins 200C)

Its the time of the year again.. hehehe.. i remember a year ago.. i posted an entry abt international rugby 7s that is held every year in Singapore and i got only one comment fm a reader.. that comment was fm somuffins... oh how time flies.. its been a year ey Cik Som and u know exactly what i meant when i said..


"Lets be honest... who knows what rugby is all abt?? i mean seriously... if u were in my place who gets invited to go and watch rugby every single year.. wud u hv known what rugby is all abt by now?? err errr... dont look at me girls... I only go cos of one thing.. hehehe "wink wink"


Yep I still dont know what rugby is all abt cik som.. i dont know how its being judged.. i dont know anything.. all i know is that i get to see men.. yes men in hot pants.. men who run and punch and kick one another just so they get to hold on to their balls.. ehhh no no i meant hold on to the ball.. ahhhh thats better .. Men in action.. i loikeeee muahahahhaha










I am so in love with my DSRL cos today when i had to look at my past entry abt international rugby i saw the huge differences between my old pics and my today's pics... i get to take good pics of men running kahkahkah

So ok heres the recipe that i used for this iphone cake..



First.. go online and look on how to do iphone applications..


Then its time to do some replica :op - ty hb for helping me to do some of it - am running out of time!!

Bake a double chocolate cake as the base.. whip up an overnight ganache.. whip up a batch of swiss meringue buttercream and ur set to embark on the journey to make ur first iphone cake!






Ingredients for double chocolate cake
Cake Ingredients:
8 eggs (A grade)
200g granulated sugar
150g flour
50g cocoa powder (I used valrhona)
130g butter, melted
1 tbsp black forest chocolate pasta toffieco
1 / 2 tbsp emulsifier (or u can add 2-3 egg yolk)

Chocolate ganache:
300 ml whip cream (I used double cream)
450g dark cooking chocolate (I used 55% and 64% valrhona)
50g butter (I added)

Decoration material / Topper according to taste


Method:
Make Cake:
- Preheat oven to 190 deg C
- Greased 3x 24cm cake pan (if ur making iphone use rectangular pan)
- Beat eggs, sugar, emulsifiers till thick and fluffy
- Add in sifted flour + cocoa powder a little at a time
- Pour the melted butter and cocoa paste, mix well
- Bake each pan for 20-25 minutes
- Lift, cool

Chocolate ganache:
- Using low heat. cook heavy cream till u see steam
- Pour warm cream into chopped chocolate - stir
- Add in butter and continue to stir (omit if ur not using butter)
- Put in fridge, at least 3 hours (I let it sit overnight)
- Whip before u use.





To assemble:
- Take one cake layer, spread ganache, top with another layer of chocolate cake, spread ganache again and place the third layer of chocolate cake.
- Cover cake with remaining ganache, the more the merrier lol.. delicious!!
- Decorated according to taste



Note:
To get black colour for ur iphone add a few drops of black wilton gel on ur ganache
To get grey on ur buttercream .. simply add a little of black wilton gel too..
