Take a look at my pic below.. its all abt macs.. some are ok.. some look good and some err were cracked! i used to get frustrated.. i still do but it has never stopped me fm trying and wondering what went wrong.. did i screw it up during folding? did i not whip the egg whites properly? is my oven too hot? question question question.. to me.. its always a challenge when it comes to macs.. eventho i bake it almost every week..

Mac cracking day.. yikes!

Finally!!

But one thing is at least now a "constant".. the size and the shape. Am so glad that I now have a baking sheet that makes the shape perfect! The mastrad macaron sheet really does it well and gives me excellent results (but it is not a A-Z solution for good macs!)... anyway, with everybody wanting this and causing the "sold out" sign to come up in my store within 24h, I have decided to have my 4th GIVEAWAY!!

So the gift will be: A mastrad small ridge Macaron Sheet + a mastrad piping bag set to go along.

And the million dollar "question":

"Give me a link to a macaron post in your blog."

- So yes, you will need to have a blog! If you don't and you want to enter, create a blog and make a short post and add a pic! It will take you less time than folding macarons!
- If you haven't made macs yet - TRY!
- The macaron post does not need to show perfect macs. It is not a beauty contest. So Fat, Flat, Skinny, Ugly macs can all join!
- Simply 'copy & paste' the link to your post in my comment box
- Please reply ONLY through the comment box below.
- GA ends 7pm on Sunday 10th July 2011 Singapore time.
- Again winner will be chosen by random.org (so as you can see, I just need the link - the macs don't need to be perfect!)

Good luck dearies!

So ok bef i start my day with my two girls .. i wanna thank Waty for all the repeat orders.. muchas gracias babe! Ty KYati who is in S'pore fm Brunei.. it was nice to meet u and ur 3 sweet looking daughters!! Thank you Sophia for ur repeat orders .. i see u again next wk! and ty Cik Rukiah for the macs orders.. see u later!

Rise and shine everyone.. its sunday.. its cleaning day.. well at least for us.. i thought bef i get started i better update my blog since i couldnt update it yesterday simply bec my router kaput..

This is the 3rd router so far eversince we moved into our place.. haishhh.. anyway, we had a full on saturday.. Lisa ( yep i finally got a helper to do my ironing twice a month :op) came by to do ironing in the morning.. If at any stage u girls need a helper.. let me know cos shes one bloody good ironer.. eh eh is there such word?? hahahha anyway long story short.. she makes all our clothing look like they came out of laundromat! :op

We later went out for late lunch and coffee.. bought ourselves a new router and now i am back in business lol.. Anyway.. I love any cake with mixed fruits in it and to bake a chocolate fruit cake is a dream come true.. so of cos when i first laid eyes on this rustic looking cake.. i knew i had to bake it.. was it super good? it was super good for hb but a little dense for my liking.. it has a texture of Sacher cake but a little moist due to the mixed fruits and caramalised sugar.. overall hb gave 4/5 for this cake.. will definately bake it again for Christmas cos thats how it feels like after i ate a slice hehehe

So ok.. without further ado.. heres the recipe that i wanna share with everyone... recipe is fm a book called Pedoman memasak terampil - Sensasi Chocolate by Albertin Hoesni..

Ingredients
(A)
200g raisins
100g red and green cheeries (diced into 4)
(I used 300g of mix fruits)
2 tbsp rum - I used 2 tbsp orange juice

2 tbsp water
3 tbsp honey

(C)
300g butter
225g caster sugar

2 tbsp milk powder
1 tsp baking powder
1/2 tsp vanilla powder

(E)
6 egg whites
1 tbsp cream of tartar

Topping
200g Couverture chocolate - I used Marmer Couverture

Method
- Soak mixed fruits with rum and let it sit for abt 2hrs .. mix a tbsp of flour into mix fruits.
- In a saucepan, cook sugar till dissolved - caramelize .. off fire and add 2 tbsp of water into it.. stir and switch on ur fire once again. Add honey and continue to stir till dissolved - set aside
- In a stand mixer.. whisk butter with caster sugar till it turns white (abt 10mins)
- Add in ur egg yolks one at a time and continue to whisk till thick.
- Lower the speed of ur mixer and add in sifted dry ingredients.
- Using spatula, add in slowly ur caramel sugar and fold in ur mix fruits gently - set aside
- Whisk egg whites with cream of tartar till stiff peak
- Fold in egg white mixture into butter mixture slowly.
- Pour batter into a greased bundt pan or tube pan (26cm)
- Bake in preheated oven of 180C for 45 mins - i used 170C for 55mins
- Once baked and cooled.. pour melted chocolate couverture onto ur cake.. u can either pour it just like that or do a rustic look by doing a little swirl on the chocolate with ur metal spatula and top with whatever u want.. pistachio, strawberry etc etc

The actual recipe comes with a butter cream recipe.. i couldnt be bothered to ice my cake with buttercream first bef pouring chocolate couveture on it... however if u wanna do all three steps.. this is the buttercream recipe that is found in this recipe.

Ingredients
200g shortening
120g butter
175ml fructose
2 tbsp condense milk
2 tbsp rum

Method
Whisk both shortening and butter till soft.. add in fructose.. add in condensed milk and continue to whisk till well combined.. lastly add in rum.

Ahhhhh what a wonderful day.... Recipe is fm Sedap magazine edisi 61/XII/2011 which i had bought recently in Jkt and if u were to ask me how it tastes like?? err well i hv only one sentence to say.. that all egg white steamed cakes taste the same... not much to rave abt.. the taste actually comes fm all the paste that u add into ur batter... however it is much healthier as it only uses egg whites... minimal sugar and also it uses oil and not butter... am not a big fan of oil based cakes but my aunt is.. so this cake was made especially for her... hope u like it cik.. err did u even get the box of cake that i left infront of ur doorstep cos i didnt even get any call fm u.. gulp :o~

Ingredients
300g egg white
1/2 tsp salt
1 tsp emulsifier
120g sugar
150g low protein flour - cake flour
20g milk powder
50ml thick coconut milk
30ml oil
1/2 tsp rhum - i used vanilla
1/2 tsp black forest paste or chocolate paste
1/2 tsp mocca paste

Method
Prepare steamer.. grease 8" round pan (I used oval pan)
Whisk egg white, salt and emulsifier
Using low speed.. add in sifted flour and milk powder
Fold in coconut milk and oil thoroughly
Divide batter into 3 equal parts.. add BF into one and mocca into another.. leave the 3rd one plain
Pour in a laddle of mocca.. followed by chocolate and lastly plain.. repeat the same action till finished
Steam ur cake for abt 25 mins on medium/high fire..

I will update another recipe which i managed to bake yesterday in a little while.. its one of Ny Liem's recipe.. so stay tuned! oh oh and also be quick to push ur supermarket trolley girls cos my BF paste is selling fast and my spekkeok are almost gone and i think the big pack condensed milk is gone when i woke up this morning hehe (stocking up for raya eh? :)
