Dont u just love recipes that only use egg whites? I know I do cos I hv lots to spare and this recipe is definitely a keeper cos it produces a super soft bolu and we simply love the taste too..





What actually intrigues me to try out this simple recipe?? honestly?? 101 Dalmations hehehe





Ingredients:
120g egg whites (from eggs 3-5)
1/4 tsp salt
225g sugar
2 tsp emulsifier
300g flour
1/4 tsp double action baking powder
200 ml Sprite
30g chocolate rice (I used more)


Method:
1. Heat steamer..
2. Whisk the egg whites and salt until soft peak (abt 3 mins). Add in sugar a little at a time and add emulsifier, beat till batter fluffy and thick (abt 7mins).
3. Add in sifted flour.. alternating with the sprite. Stir well. Add in chocolate rice.
4. Pour batter into individual mould.. top with more chocolate rice and steam for a good 10mins.

So many things happened lately that I dont even wanna think abt it anymore.. the bottom line is I am grateful.. I am glad and most of all I feel blessed.. last Monday was one terrifying day for me and I hope that I dont hv to go thru that anymore.. Thank you all for ur prayers.. truly appreciated it.. everything is ok now.. things are slowly getting back to normal... my mind is no longer focusing on one thing.. Alhamdullilah.. :o)






That night we had iftar at moms.. wasnt planned but we managed to get it organised.. I prepared baked pasta as main meal.. did konnyaku chocolate jelly and durian cream puff as desert.. sis wati cooked chicken korma and BIL cooked Roti John.. it was a last minute thingy but we ended up with lots of food.. glad that everyone was there for us to share the so called semi good news..


So anyway lets not talk abt that anymore.. this was one of the deserts that I had prepared to take to Moms.. durian puff is one of moms fav desert.. I knew that sis Lyn and family were not big fans of durian but I cant do much since I dont hv enough eggs to make cream puff fillings.. I whipped out my own durian cream filling recipe and this was what i got.. I will definately add more durian flesh next time to gv that durian kick cream puff taste hehehe..






Ohhh and guess what.. finally my 1 1/2 yrs old Acer lappy died on me two nights ago.. hb had tried to revive it back but.. poor hb.. he stayed up till after 1am to fix it but to no avail.. sigh.. I was pretty frustrated with my lappy cos this was the second time that it had died on me.. dont see any reason to send it for repair either so what did hb do yesterday?? he got me a new lappy.. horrahhhh and this time round its a HP.. woot woot hehehe.. ty babe.. ur there when I needed a shoulder to cry on... u were there to listen to all my woos.. ur there when it comes to shopping hehehe.. love u to bits!!


Ingredients
125 g water
125 g milk
100 g butter
1/4 teaspoon salt
150g flour
5 eggs






Method
1. Sift flour on paper.
2.Place water, milk, butter and salt in a pot and heat until butter melts and the mixture starts to boil.
3. Remove from heat and pour in all the flour while continu beating.
4. Put back on the stove and mix until the dough forms a ball and leaves the side of the pot.
5. Remove the pot and pour the dough into a mixing bowl. Using a beater start beating the dough for 2 minutes.
6. Add eggs one at a time making sure thoroughly mixed. Dough should be soft and shiny.
7. Place into piping bag and pipe into shpaes.
8. Bake in a preheated oven 180C until it's golden brown.



Durian pastry cream

Ingredients
125g durian flesh (next time I'll use 200g)
3ooml milk
110g sugar
40g corn flour
1 egg yolk
1/4 teaspoon salt
1 cup whipping cream- whip until soft peaks form (Omit if ur looking after ur waistline lol)


Method
1. Blend durian flesh and milk
2. Add in sugar and salt - place it in a pan
3. Heat the milk/durian until it starts to boil. Add in corn flour and continue to stir.
4. Add in egg yolk and continue to stir using a whisk until small bubble appear. Cook for another 2 minutes. Remove and pour into another container and cover with cling film. Cool down and chill for 2 hours.
6. Once cold fold in the whipping cream. Place in fridge until ready to use.

Ramadhan month is one busy month I must say... there is so so much to do bef Eid.. I am taking this opportunity to do as much as I can since I'm not fasting.. been cleaning one floor at a time hahaha.. anyway last friday we took Sonia to see her doc in Paragon.. shes having flu and feverish.. now shes better.. a quick recovery.. alhamdullilah.. took my parents out to do a little bit of shopping yesterday and had our iftar in one of the Lebanese restaurants in Arab Street... Dad was talking non stop abt the day we had Labanese food in Melbourne n that he enjoyed it very much.. yes dad.. I got the hint.. kalau ade rezki we will take u guys there again hehehe








Anyway I cant stay long.... my mind is tired.. pls pray for me that everything is gonna be ok tomorrow.. that this is just a bad dream.. that all the dissapointment be put away.. that whatever it is tmrw.. it happens with God's will ... Ya Allah I am having anxiety thinking abt tomorrow... I hv to think positive.. keep calm and be strong.. pls help me dear God..

While I am writing this post I realise that tmrw is Friday... they say when ur a stay home mom u tend to forget dates and days very easily.. true enough.. after being a SAHM for almost 3 1/2 yrs now.. I know now what they say is true ..

I am not complaining.. I enjoy every bit of my time with Sonia.. shes always there ready with a smile on her face and to gv her mama a big hug whenever I need it.. :o)







This morning after prayer I couldnt get myself to fall asleep again.. if it was up to me.. I would probably start to bake something but hb had warned me not to cos he knows I need all the rest that i can get.. so what did i do?? hehehe blog walking :o)







Well anyway.. since I will not be able to fast for the next 7 days.. I thought its a good idea for me to start cleaning my place so that i dont hv to be in panic mode 3 wks fm now.. wasnt that successful cos half way thru.. I decided to bake..

This is the cake that I've been aiming to bake for the past few months.. the only thing that is stopping me fm baking it was the black forest paste.. I couldnt find it here so when I finally found it in jkt.. I was like .. YESSS!!! I bought a few bottles of BF and also a few packet of chocolate condense milk (theres another recipe that I am dying to try using chocolate condense milk).. To be honest after 2wks of not feeling oh-so-good.. I actually feel a little better today.. so much so that when Lyn asked me if I wanna tag along to Geylang to look at Ramadhan lights.. I said yes..

Sorry to someone that I bumped into earlier today at Joo Chiat.. I didnt get ur name dear and ty for saying hi.. I appreciated it.. :o))






So here is the recipe for this cake.. we love the texture and taste of this cake.. moist and tasty.. hb loves it alot... will definately be baking this cake for upcoming Eid.. :o)


Ingredients
(A)
12 egg yolk
7 egg whites
375g sugar (I used 350g)
20g emulsifier

(B)
200 gr flour
40 gr milk powder
1 teaspoon baking powder

(C)
200g butter / margarine
50g coconut milk

(D)
1 tbsp black forest paste
1 tbsp Mocca paste


Method:
Prepare the pan 22x22x7cm, greased and line baking sheet.
Mix ingredients B. Set aside.
Whisk ingredients C until smooth - set aside.
Beat ingredients A till thick and fluffy, add B and mix well
Add ingredients C and continue to mix till well combined
Divide batter into three equal parts. One part add Black Forest paste
Add Mocca paste in the 2nd parts
Let the other part remain
Pour Black forest batter into the pan and steamed it for 10 minutes until cooked
Pour Mocca batter and continue to steam it again for 10 minutes,
Lastly pour white batter, steamed for 20 minutes.
Remove, let cool. Remove from pan, cut into pieces.






Note: If u wanna gv this recipe a try u can also sub BF paste with chocolate paste

A very simple desert that u can prepare any time of the day.. well bef iftar of cos hehehe.. Hb has been wanting me to try out this jele brand instant pudding for the longest time but I had my doubts abt the taste and to be honest after tasting it.. i really find they are ok.. i mean i had it on its own.. nothing special.. add cubed mangoes and voila.. u got a tastier pudding :o)






Ingredients
Jele Instant Mango Pudding
3000ml water (I will use lesser next time)
400ml evaporated milk
100g sugar


Method
Boil water and sugar.. add in evaporated milk and wait till its slightly boil.
Turn off fire and add in instant pudding.. stir for 5 mins
Pour pudding mixture into mould
Let it set..

Its unbelievable how time flies today.. I woke up at 5am (tks to our morning diet of cereal/milk, dates and orange juice) and right after morning prayer I went back to bed.. woke up again in time bef hb went to work and since then I hv been awake.. now its nothing out of ordinary yah.. its just that do u ever wonder how on earth we manage to go thru our days without even feeling hungry and thirsty during fasting month?? Shukran :o)






This year once again Hairi is not with us to celebrate first day of Ramadhan.. last night he called and asked if we will be having our iftar with the family and if his grandmama was gonna cook Rawon (typical in our family.. first day iftar is at mom's and the dishes are always Rawon, bagedil, tempeh, rendang, paru, sambal tumis sotong, sambal goreng and not forgetting sambal belacan) and when i told him its gonna be Rawon he goes.. "Oh mannnnnn..." .. awww poor boy..




Sis Wati, Sis Lyn, BIL and their kiddies were there too.. gd to see u guys!


So as always I am in charge of the sweet stuff.. I took along cat tongues for the kids.. I prepared two types of kuih dadar.. I baked marble banana muffins again... glad everyone loves it!





Ingredients
Crepes
150g flour
1/4 tsp salt
1 large egg
25ml suji leaves n pandan leaves water (I omitted n added 1/2 tsp of pandan paste)
400ml coconut milk (200ml KARA + 225ml water)
1 tsp melted margarine (I used unsalted butter)


Method
Sieve flour and add salt
Mix egg and coconut milk
Pour coconut milk mixture into flour mixture and continue to mix till batter is smooth
Take 1/4 batter and pour it into piping bag - set aside
To the rest of the batter add pandan & suji leaves water
Heat up a non-stick pan, brush the pan with a bit of oil, pipe in plain batter - zig zag or any kinda motive u like.
Pour some pandan batter to the pan and swirl the pan around so that the batter completely covers the base.
Cook the crepe until you see the side is lightly brown and crispy. Flip it over and cook the other side for about 20 seconds. Remove from pan.
Put some filing on the pancake and roll it up like a spring roll. Serve as dessert or for tea time.


Coconut filling:
250 gm. grated coconut
30 gm. castor sugar
100 gm. gula melaka (palm sugar)
30g dark brown sugar (i added)
60 gm. water
1 tsp. cornflour
2 pcs. pandan leaves - cut into small pieces

Method
Cook sugar, gula melaka and water in a wok till sugar melts.
Add in grated coconut and pandan leaves and fry till dry.
Sprinkle cornflour on top and stir till well mixed.
Cool before using.



Dadar Chocolate
Ingredients
150g flour
1/4 tsp salt
400ml milk
1 large egg
1/4 tsp chocolate paste
1 tsp melted margarine

Method
Same as abv

Chocolate filling
40g corn flour
2 tbsp cocoa powder
300ml milk
150g sugar
1/2 tsp salt
1/2 tsp chocolate paste

Method
Mix all ingredients and cook on low fire till thicken - set aside


Note: I used coconut filling for both Dadar

The holy month of Ramadhan for Muslims is just a day away and already supermarket shelves are loaded with a huge variety of fresh, dried and stuffed dates since a week ago... I hv been waiting for the month of Ramadhan since like forever.. its a time for spiritual reflection, prayer, doing good deeds and spending time with family and friends.. dont get me wrong yah.. u do good deeds whenever u can but doing it in the month of Ramadhan is something special..







As we already know.. fasting is intended to help/teach Muslims self-discipline, self-restraint n generosity... It also reminds them of the suffering of poor ppl.. who may not get to eat lavishly all the time... It is common to have one meal (Sahur) just bef sunrise and another (Iftar) right after sunset... This meal will commonly consist of dates, following the example of the Prophet Muhammad and bec Ramadan is a time to spend with friends and family.. the fast will often be broken by Muslim families coming together to share in an evening meal...






Well anyway.. long story short... this is the last cookie that I will bake bef Eid.. as always I usually will try to post pics and recipes of my desert/kuih during Ramadhan.. sooo.. I would like to wish u guys a peaceful Ramadhan.. May this Ramadhan be filled with many blessings for u and ur family.. May u hv a very happy Ramadhan..






Ingredients
250g Margarine (I used butter)
3 tbsp powdered milk
1/2 tsp vanilie powder
200g powdered sugar
180 ml egg whites
250g of all purpose flour

Topping
poppy seeds/ grated cheese/ sprinkles for decoration


Method:
• Preheat oven to 180 deg C
• Grease a baking pan with margarine
• Beat margarine, powdered milk, vanilie, and powdered sugar until smooth
• Add in egg whites a little at a time until blended
• Add in flour a little at a time and continue to whip until smooth
• Put the mixture into the bag bag. Pipe into the pan (abt 5 cm long)
• Bake for 15 minutes.
• Quickly remove cookies from pan.
• Cool down, and place in an airtight container





Note:
You may sprinkle it with grated cheese, poppy seed, or sprinkles for decoration.
To make Chocolate cat tongues u need to reduce the flour by 50g n add 50g of cocoa powder... I added 1 tsp of mocca paste to half of my batter to get mocca cat tougues



And in case u wanna know how I get my cat's tougue in similar shapes and sizes.. this is one of the pans that I bought while shopping in that supermarket in Jkt :o)

For 16 years of my life.. every August.. come what may.. dad would take his three daughters to go and watch fireworks.. sometimes i felt that its like a ritual thingy in our family... dad is that sort who loves to take his daughters to watch this kinda of stuff.. be it fireworks.. or even watch thaipusam.. he will take us to go and watch floats during national day.. he wud take us to go and watch the national day parade at the National Stadium and bec dad used to work with SSC.. it was easy for us to get entry ticket..






Now that obtaining tickets for the NDP have changed to a balloting system we have not watched it in a long time. Not that we dont ballot, but we just cant get tickets! So what we normally do now is to park our car on top of Peninsula Plaza and watch the fireworks there..

Anyway...I wish i cud stay longer and talk abt our independence day but i guess thats not gonna happen since we are abt to go to the hospital to visit my grandmama again.. I guess this year my plan to take photos of fireworks will hv to wait till next year..






Ingredients
450g sugar (I used 420g)
500g flour
1 tsp double acting baking powder
4 eggs
300 cc of water / dilute milk / coconut milk (I used milk)
1 tbsp emulsifier
1 tsp banana essence
1 tsp cocopandan paste (I added)
1 tsp black forest paste (I added)





Method 1
Beat all ingredients 10 minutes, pour in the mold that has been coated paper, and steam for 10 minutes

Method 2
Mix the flour, baking powder, double acting (BPDA), sieve, set aside.
Whisk sugar, eggs and emulsifier until thick, add the flour and milk alternately and continue to whisk till well combined.. add in banana essence and stir well.
Divide batter into two and add whatever paste u like.. Pipe into molds, steam for 10 minutes.





I was thinking since we are celebrating our National Day today.. I shud stick to the red and white theme.. :o))

A full on day today.. woke up early to prepare Ilah's TCCC (Triple chocolate caramel cake).. she had ordered it last week while we were in Jakarta and had wanted to surprise her mom.. tsk tsk.. her mom is a chocolate addict.. just like my mom hehehe.. Ty Ilah cos I really enjoy baking TCCC.. err to be honest.. right now anything thats got to do with piping I will be super excited..







Last night we received a phone call fm mom to let us know that my grandmama was admitted to hospital... it didnt come as a surprise to us cos the last time we saw her.. one of her legs was swollen and we suspected that maybe the medication that she has to take on a daily basis does not really help her.. so yesterday when she went for her monthly check up.. doc decided to admit her so that they can put in antibiotics into her body thru drips..

Anyway.. not to worry.. My grandmama is a fighter.. Insya Allah shes gonna be alright.. She looks better already when we visited her today.. her leg looks normal... no longer swollen.. she can sit and eat.. she can talk and laugh.. so am praying that she will be discharged in a few days time.. well at least bef Ramadhan.. oh wow... Ramadhan is approaching and I cant wait.. this year has not been that good but I am counting my blessing... Alhamdullilah...


Well ok I am gonna hit the sack.. my son came home last night and I'm glad that we got to spend a few hours talking and listening to one another.. good night and oh bef I go.. I would love to share photos of my Sasha.. shes been with us for 6 yrs now and she knows when her mama is down......

I have been wanting to bake Opera cake for as long as I can remember.. it looks complicated and to be honest if it wasnt cos I am in this state of mind.. I wouldnt even wanna attempt baking it... Am i glad that I finally did it?? ahuh... eventho I am at my lowest .. the thing is.. I think alot of ppl work well under pressure... and I am one of those ppl..






Opera cake... Classic indeed ey.... The first time I had a slice... it was 8 yrs ago when we were in Vietnam.. HCM city to be exact.. hb took me to this classy French-style cafe by the Opera theatre (opposite the Continental Hotel) .. I hv to admit at first I was a little apprehensive when he chose opera cake as our desert.. but I sure underestimated it.. little did I know that I was gonna get one spoonful of surprises in my mouth.


It was ohhhh so so good... you would think that the cake is just gonna be ok.. but then.. oh wow! Up to now I still cant find the match to that cake.. not even when I had a slice fm my last trip to Europe.. Anyway long story short.. this is the product of what I baked last night..






Ingredients
Jaconde Cake:
200 g ground almond
150 g caster sugar
6 eggs
50 g butter, melted
60 g flour
4 egg whites (160g)
60 g powdered/confectioners sugar
Strong brewed coffee to brush the cake layers

Coffee syrup
I used double shot espresso
100g of sugar to make 100ml of coffee syrup

Chocolate Ganache:
250g Dark Cooking Chocolate, chopped (I used Manner couverture)
250ml whipping cream (I used double cream)

Coffee Ganache
250g White Cooking Chocolate (I used Manner couverture)
250ml whipping cream (I used double cream)
10g instant coffee


Method
Chocolate Ganache:
Heat the cream just until boiling point, turn off the heat. Stir in dark cooking chocolate until melted and makes a smooth and shiny ganache.
Let cool and keep it in the fridge for a night. Before using it, take out from the fridge and mix/whip until fluffy and easy to spread. (I heat cream and pour it over my chocolate till melted and makes a smooth and shiny ganache.. dont hv the patience to keep it overnight.. only chill it for 3hrs)

Coffee Ganache
Heat the cream till boiling point, turn off heat and add instant coffee bef pouring it over white cooking chocolate)


Cake:
Beat ground almond, caster sugar and 3 eggs with electric mixer for about 10 minutes.
Beat in the remaining 3 eggs while continue beating for about 10 minutes more.
Drop 2 big spoons of this batter into melted butter, stir until blended, set aside.
Mix the flour with ground almond batter.
Beat the egg whites until frothy, beat in powdered/confectioners sugar while continue beating until it forms soft peaks.
Fold this egg whites into almond batter. Fold in the melted butter that has been mixed with a little almond batter until well blended. (I added 1/3 egg white into almond batter bef pouring the rest of almond batter into egg white)
Divide the batter into 6 pans (22 x 22 cm each), bake 10 minutes in 200 degree Celcius. Let cool on a wire rack. (I suggest u do 2 pan at one go that way ur batter is not expose far too long)




Assembling:
Take one layer, brush it with strong coffee. Spread coffee ganache onto the layer.
Put another cake layer on top of the first layer, brush it with strong coffee. Spread chocolate ganache onto this second layer.
Repeat this process until all layers has been assembled. Put the assembled cake in refrigerator for about 20 minutes to firm the structure.
Pour melted chocolate or remaining ganache if any (reheat if necessary) over the cooled cake. Set aside in the refrigerator just until the chocolate topping is firm (about 1 hour).
Cut the crust sides of the cake with a long thin knife that’s just been dipped into hot water and wiped.






Note:
You can also replaced coffee ganache with coffee buttercream
100g of unsalted butter
100g of soft cream (Hollman brand)
100g of sweetened condensed milk
1 tbsp instant coffee, dissolve it with 2 tablespoons hot water

Mixed instant coffee with sweetened condensed milk, set aside
Whisk butter and soft cream till white.
Add sweetened condensed milk and continue to beat until blended.

I know I hv not been updating my blog recently.. its just that I am not at my best right now.. there are too many things on my mind that make me feel so so down... hb reminds me over n over again that I shud just take things one day at a time... that I shud be thankful I hv Sonia to hug when I needed someone to hug.. that I hv a roof over my head.. that I am healthy.. that hb has a job... that Hairi is all grown up.. that whatever happens.. it happens for a reason...

So today after I put Sonia to bed.. I decided to bake something.. nothing fancy.. just a simple marmer cake to take my mind off things .. cake turned out well eventho my heart n mind are somewhere else :o(


Ingredients
150g butter (I used President)
100g sugar
3 eggs
1 egg yolk
150g flour
1 tsp baking powder (I used double acting powder)
1 tsp cocoa powder (I used valrhona)
1/2 tsp vanilla essence (I added)
1 tsp black forest paste (I added.. if u cant find BFP u can sub with chocolate paste)





Method
Sieve flour and baking powder.. set aside.
Beat butter until soft, add sugar slowly.. whipped until white.
Add eggs one at a time and continue to beat till well combined. Turn speed to low and add vanilla essence.. add sifted flour.. mix well.
Set aside 2 tablespoons of batter and add cocoa powder and BFP, mix well. Pour remaining white batter into 22x10cm loaf pan.. top with chocolate batter and gv it a few swirl (with chopsticks) to form a marble motif.
Bake in oven with a temperature of 180C for 40 minutes or until cooked. (I used friand mould and bake it for 20mins)





On a lighter note.. my son has gotten his motorbike licence while we were in Jakarta.. congrats son eventho mama prefers u to be driving a car..
