Was sind Deutsche Kekse? Genause wie "Singapore Noodles" oder "Deutsche" Blackforest Cake. Nichtsdestotrotz schmecken diese Kekse absolut lecker und "schmelzen" im Mund. Die halbe Dose ist schon leer und mein lieber Mann hat schon fuer Nachschub gebeten :)



I am loving my day chilling at home for a change.. nowhere to go since all the malls are closed anyway.. did our typical cleaning.. watched telly all day long and at the same time managed to bake a cake and also these cookies.. Danke Jessie for sharing this wonderful recipe..

Ingredients
125g butter - i used golden churn
40g icing sugar (sieved)
125g potato starch
80g superfine flour (I used Plain Flour)



Method
1. Beat butter and icing sugar till fluffy and lighter in colour.
2. Sift in potato starch and plain flour, mix to form a soft dough.
3. Roll into small balls (about 7g each) and arrange on lined baking tray - i used 1/2 tbsp to get the same size
4. Dip the tip of the fork in a bowl of water and press on cookie dough.
5. Bake in preheated oven at 170 deg C for 15 mins

First off.. we wanna wish all our friends and relatives a Merry Christmas...for those in Europe it is definitely a very White Christmas and I hope that everyone got home in time and safely... we woke up pretty early today despite the wonderful and cooling weather.. u can really feel the quietness and the serenity surrounding our house... Sonia and papa came down and gave me a big hug wishing me happy holidays... :o)




Anyway.. This is one cookie that is a must every year in the Aue's household.. hb will without fail request this cookie to be baked and served during Christmas.. the original recipe u can get fm my previous post.. this year i decided to use snow princess recipe and added almond powder to it.. :o)





Ingredients:
250g margarine - I used Anchor unsalted butter and added 1/4tsp salt
2 tbsp milk powder
1/2 tsp baking powder
225gg of low-protein flour - cake flour
225g almond powder


200g powdered sugar
1/2 tsp vanilli powder - I used 1/2 tbsp


Method
- Preheat oven to 160 deg C
- Grease a baking pan with margarine
- Beat margarine, milk powder, and baking powder until smooth
- Add sifted almond powder and flour, stir well until ur dough is good enough to shape
- Shape it like crescent
- Bake for 20 minutes, lift it immediately while its hot and roll it into ur powder sugar + vanilli (I sieved my sugar and pls be careful when ur roll em cos it break!)
- Store in airtight container

This is what happens every single year two weeks bef year end.. hb clears his whatever is left of his annual leave.. i am 80% off duty as "Maria" simply cos we will be out and abt hehe.. i dont get to bake as much and we wud be busy doing our last min Christmas shopping.. i am happy to say that we finally got our tree.. abt 70% done with our christmas shopping and early tmrw morning right after subuh prayer we are off to Penang for 3 days with some friends and also sis Lyn and co.. sis wati will be joining us in KL on the weekend.. soo its gonna be fun.. so so nice to be able to just chill and eat our heart out heheh





So ok.. i had baked hb's fav cookies to be given to hb's family friends in Penang.. we see Kok Cheong almost every single time we are in KL and since we will be in Penang for the weekend.. we will be seeing him and his family in Penang instead.. so good stuff! These cutiepies have kept me busy since last night.. Ty Mitzi for the order; and Erika ur mom has good taste when it comes to gifts.. ur friends are lucky to hv u as classmate hehehe

You know how it is when ur kid is down with high fever, cough and flu.. u simply hv no time to do anything else except to be by her side all day long.. well Sonia has been sick since Monday.. shes running a high fever of 39 deg and coughing very badly.. shes fussy and always wants me to be by her side.. well right now her fever has subsided and the only thing that is bothering her big time is her flu and cough.. poor girl..







We hv not been able to do any visiting either.. not even to go and visit my grandmama who was admitted to hospital on Monday... shes there cos of the same complication again and I really hope that shes gonna get better soon.. hopefully once Sonia has fully recovered.. I am able to visit her :o(







Anyway today right after I put Sonia to bed.. I decided to try my hand on this cookie.. I had planned to bake it bef Eid but unfortunately time was not on my side.. well well well.. what do u know.. they shud call it devil's brownie cookie instead cos u simply cant stop eating em.. use good chocolate to get good result ok and I am pretty sure u will agree with me that it shud be called Devil's Brownie hehehe






Ingredients
4 eggs
225g caster sugar

25g cocoa powder (I used valrhona)
200g Low protein flour - Cake flour

125g butter (I used unsalted butter and added 1/8tsp of salt)
125g dark cooking chocolate (i used valrhona 55%)
1 tsp vanilla extract

Sliced almonds for topping


Method:
Prepare two greased baking sheet (30x30cmx2cm)..
Preheat oven 200C for 15mins
Melt butter and add to dark cooking chocolate. Stir till it melt and add vanilla.
Beat eggs and castor sugar until the half-inflated, add sifted flour and cocoa powder gradually, stir with a spatula
Add butter mixture and continue to stir.
Pour batter into pan, spread it evenly, sprinkle with sliced almonds
Bake it for 15 minutes or until cooked
Remove from pan, cut into small square and place em back on baking tray.
Reduce oven temperature to 120C and bake it for 30min or till dry.
Let cool, store in air tight container.

Is it just me or is it the weather that makes me feel really really tired during day time.. I dont feel like doing anything but always end up cleaning.. today i did Sonia's room.. putting aside her old clothing that she can no longer wear.. placing it in a box to be given away.. some she didnt even get to wear cos her mama simply loves to shop for her.. tsk tsk

Looking at all her clothing makes me think of the time I had her.. she was such a beautiful tiny little baby and only weighed 2.4kg.. eventho she was tiny.. I still had to undergo emergency c section cos her heartbeat was getting slower and slower.. I never thought that I would go thru that after taking the epidural but.. oh well.. she was out within a couple of hours and papa didnt get to go in the operating theater.






Sonia is two and half years old now.. she has two wardrobes full of clothing and I dont think I can ever stop buying clothing for her as long as I get to travel with hb (cos thats the only time I shop for clothing and cos we're both girls...) :o)

So anyway.. I baked this cookie last night and after I was done covering all the almond london with chocolate I had abt 1/4 of melted chocolate left.. so what did i do?? I added cornflakes to it and now I hv another type of cookie.. hehehe


Ingredients
125g butter
225g flour*
1 tsp emplex* (*sieve)
70g icing sugar
1 egg yolk
1/2 tsp vanilla essence
150 seeds shelled almonds (i get abt 100pcs out of this recipe)

Topping
300g of cooking chocolate (I used valrhona 55%)
1/3 tsp vegetable fat - shortening (I used cocoa butter- 80g)
Adequately chopped almonds, roasted (i didnt use)





Method
Preheat oven 175C.. bake almonds for abt 15 mins.. Let cool.
Whisk butter, icing sugar and vanilla essence until well combined. Add in egg yolk and beat until well mix. Turn mixer to low speed, add flour a little at a time till it form a soft dough.
I used measuring spoon to scoop out dough to get an even size (1 tsp).. roll dough and press toasted almond in the middle and cover it back n shape it oval.. arrange in a baking tray.
Bake at 175C for 20 minutes or golden. Cool completely. (mine was done within 12mins)
Using double boiler method.. Melt the cooking chocolate.. once melt add vegetable fat (cocoa butter), stir well.
Take a piece of almond london, put in a small paper cup, Spoon 3/4 tsp melted chocolate and pour it over almond london. Arrange almond london close to one another. Sprinkle some chopped almonds while the chocolate is still soft. Let chocolate harden and store in airtight container. (I dipped each almond london into melted chocolate and placed it into a paper cup)



Note: Chocolate was too runny after i added 80g of cocoa butter.. next time I will only use 30g..

Imagine doing these in the middle of the night.. eeekkk it can be pretty monotonous and it makes u feel so so soooo tired... I couldnt sleep last night.. tks to a single shot of con panna! And when for some reason I had probs accessing blogspot.. I knew I had to do something.. reading a book will definitely make me sleepy but at the same time its good cos i need to finish up reading my long overdue book BUT nooooo Rima has to go to the kitchen and start baking.. smart move Rima :ox





Anyway I only went to bed after sahur and munching on this suji hehhe.. and yes of cos i can let u know the texture of this suji.. remember the bai suji?? yes this one tastes exactly like bai suji.. light, crunchy and hollow inside.. I likeeee.. so thank you kak fida of myresepi for sharing this recipe!


Ingredients
600-800g flour - sieve
500g powdered sugar / icing - sieve
500g ghee
1/2 tsp vanilli powder
1 tsp bicarbonate of soda - sieve
3 eggs yolks





Method
Mix Sugar and ghee till well mixed.
Add egg yolks and mix again.. add the vanilli and b. soda and mix until well blended.
Add flour a little at a time.
Take a little dough and roll it into small balls.. place it on baking tray - I did what was recommended .. I used my measuring spoon (1/2 tsp) for every ball to get an even shape and size.
Bake at 150C for 10-12 min.
Let the cookies cool and keep in airtight container.





I decided to half this recipe simply cos it was too late when i started baking em plus u get lots out of this recipe since the size of each ball is 1/2 tsp :op


Oh bef I go.. besides suji.. I also managed to bake my almost famous amos cookies, vanilla cat's tongue for my sis and also pandan cats tongue for mom.. phewww.. almost done now :o)




Cat's tongue recipe u can get it fm my previous post except i used a tbsp of pandan paste instead of mocca paste.

Let me just finish up posting another cookie recipe which I managed to bake last weekend.. was curious on how this one wud turn out cos I hv never used lemon juice in making cookies bef.. very refreshing I must say.. and very addictive too cos u can never get tired of eating something that has a lemon tint in it - dont u just love new recipes?? not only u get to try out new stuff.. u get to taste new type of cookie too :o)





Oh if ur curious if this cookie is really a crunchy type or not.. All I can say is.. krup krup krup hehehe


Ingredients
275g Nestle Corn Flake - roughly mashed
200g butter
50g shortening
100g granulated sugar
150g flour
1 tbsp full cream milk powder
2 egg yolks
1 tsp emplex (optional) - I used
1 tsp lemon juice
1 tsp Baking Powder
1 tbsp grated lemon zest





Method
Place Corn Flake in bowl, set aside.
Beat butter, shortening and sugar until smooth, add eggs, beat again for a while, add the emplex and baking powder, whisk for one minute. Pour lemon juice and grated lemon zest, mix well.
Add the flour, stir well. Place batter in a Piping bags, snip tip with scissors 1/2cm. Pipe batter onto Corn Flake, roll, lift and place in a greased baking pan
Bake in oven at 150C for 30 minutes..(mine was done within 20 mins)

No no no.. when I say Snow Princess.. I dont mean.. Dora the Explorer hehehhe.. this cookie is actually called Putri Salju.. direct translation wud be Snow Princess ahakkk... I'm planning to bake this gem again bef Eid cos after dividing it and munching on it non stop last night.. I dont think this cookie is gonna last till tmrw hahaha... I am crazy over this classic super melting moment cookie.. super easy to do and pls watch ur fingers when u roll ur hot cookies into the powdered sugar.. cos this cookie not only burns ur fingers.. it also burns ur dream of looking sexy for Eid muahahha





Ingredients:
250g margarine - I used butter
2 tbsp milk powder
1/2 tsp baking powder
450g of low-protein flour - cake flour

200g powdered sugar
1/2 tsp vanilli powder - I used 1/2 tbsp


Method

Been three days since I last updated my blog.. too much stuff to do .. too little time to blog abt it.. Eid is coming and ohh I hv lots to bake.. so far so good.. I hv been on the roll and I dont wish to stop hehehe..





So ok now that I hv steamed 3 cake kukus.. I moved on to cookies today and oh boy I fell in love with these cookies bec of its "melt in ur mouth" texture.. so so glad I decided to try out both recipes.. not only do I get to try out a new recipes.. I also get to share these wonderful recipes with all my lovelies :op





Will try to update more often with lots of new recipes .. oh bef i forgot.. I only get abt 120pcs out of this recipe.. had to double the ingredients since I am baking for the family.. Enjoy!





Ingredients
250g Margarine
250g Butter - I decided to use all Butter (ie. 500g)
100g granulated sugar
4 egg yolks
700g flour
4 tbsp Full Cream milk powder

Glazing
2 egg yolks
1 tsp cookie glaze- I used 1 tsp of milk


Method:
Whisk butter, sugar and eggs until blended. (Mixer speed no 1)
Add sifted flour and milk powder, stir gently until well blended.
Take a little, round shape, fill with pineapple jam. Place on a baking tray.
Bake tarts at 140C for 30 minutes, remove from oven, glaze it and place it in the oven again for abt 3mins or so
Remove, let cool, put in jars, cover tightly.


Pineapple jam
Ingredients

4 pcs pineapple, puree
200 gr sugar
1 tsp salt
1 cinnamon stick

Method:
Cook pineapple with salt and cinnamon until crispy, add sugar, cook over low heat until dry.. off fire




Ok I promise I will update again tomorrow cos both my sisters just called (its 1:51am).. we are gonna go for sahur in JK and I will gv u some tips on how to get the same shape for ur Nastar..

Ok I'm back and its 3.45am now.. I am off to bed.. heres the tip to get an even size of nastar.. Roll cookie dough (1/4cm thick).. cut with cookie cutter.. take one layer.. place ur pineapple filling in the center then top it with another layer.. roll like a ball.. thats it.. easy peasy?? hehehe

The holy month of Ramadhan for Muslims is just a day away and already supermarket shelves are loaded with a huge variety of fresh, dried and stuffed dates since a week ago... I hv been waiting for the month of Ramadhan since like forever.. its a time for spiritual reflection, prayer, doing good deeds and spending time with family and friends.. dont get me wrong yah.. u do good deeds whenever u can but doing it in the month of Ramadhan is something special..







As we already know.. fasting is intended to help/teach Muslims self-discipline, self-restraint n generosity... It also reminds them of the suffering of poor ppl.. who may not get to eat lavishly all the time... It is common to have one meal (Sahur) just bef sunrise and another (Iftar) right after sunset... This meal will commonly consist of dates, following the example of the Prophet Muhammad and bec Ramadan is a time to spend with friends and family.. the fast will often be broken by Muslim families coming together to share in an evening meal...






Well anyway.. long story short... this is the last cookie that I will bake bef Eid.. as always I usually will try to post pics and recipes of my desert/kuih during Ramadhan.. sooo.. I would like to wish u guys a peaceful Ramadhan.. May this Ramadhan be filled with many blessings for u and ur family.. May u hv a very happy Ramadhan..






Ingredients
250g Margarine (I used butter)
3 tbsp powdered milk
1/2 tsp vanilie powder
200g powdered sugar
180 ml egg whites
250g of all purpose flour

Topping
poppy seeds/ grated cheese/ sprinkles for decoration


Method:
• Preheat oven to 180 deg C
• Grease a baking pan with margarine
• Beat margarine, powdered milk, vanilie, and powdered sugar until smooth
• Add in egg whites a little at a time until blended
• Add in flour a little at a time and continue to whip until smooth
• Put the mixture into the bag bag. Pipe into the pan (abt 5 cm long)
• Bake for 15 minutes.
• Quickly remove cookies from pan.
• Cool down, and place in an airtight container





Note:
You may sprinkle it with grated cheese, poppy seed, or sprinkles for decoration.
To make Chocolate cat tongues u need to reduce the flour by 50g n add 50g of cocoa powder... I added 1 tsp of mocca paste to half of my batter to get mocca cat tougues



And in case u wanna know how I get my cat's tougue in similar shapes and sizes.. this is one of the pans that I bought while shopping in that supermarket in Jkt :o)

So its obvious that Mr "Aid" lost its virginity today... I didnt wanna do it but the temptation was too overwhelming .. where ever I go I caught him looking at me with that sexy looking eye, body and feet... I had to do it... I just had to do it.. its either gonna be today or never :op

I began to walk closer to him.. looking at him straight to his eyes... touching him.. eh ehhhh this is wrong... my blog is rated PG! oppsssyyy hahaha






Anyway for a start I decided to bake hb his fav cookies since he was generous enough to buy me THE mixer.. in a way its like I gv him the honour and paying him back for his generosity lol.. so here is the recipe once again..



Ingredients
250g salted butter,softened (i used SCS)
200g light brown sugar
1/4 tsp salt (i didnt add)
1/2 tsp coffee oil
1 egg
1 tsp vanilla extract
1/4 cup oats,processed to bits in a chopper (i used nestum)
1/4 cup ground almonds
1/2 cup of your favourite nuts,chopped finely (optional)(i used whole cashew nuts.. toasted)
1 pack of Nestle Tollhouse semi-sweet chocolate chips OR chocolate chunks (ran out of Tollhouse - I used dark chocolate chip bought fm Bagus)
300g self-raising flour (i used plain flour with 1/2tsp of baking powder)


Method
This is the most important step,at least 2 hours before,or the night before,beat the egg with the vanilla and the coffee oil to infuse or you can do this the night before,refrigerate it then bring it to room temperature before baking.

Preheat oven to 160C.

To the softened butter,beat in the sugar and the salt to combine. Beat in the egg and stir in the processed oats,ground almonds,optional chopped nuts and the chocolate chunks. Sift the flour and fold it in,this dough will not be too stiff but not too wet either.

For small cookies,place half-tsp of the dough,spaced slightly apart on the cookie sheet and bake for 9 to 10 minutes.

For large cookies, place rounded tbsp of the dough spaced apart on the cookie sheet and bake for 20 to 22 minutes.

Cool completely and let it sit overnight in an airtight container,this is for the flavour and fragrance to develop further.

Note: I baked mine for 10mins cos hb prefers the semi chewy type of cookie (If it was up to him he would say "no need to bake, just put the cookie dough into a Tupperware...")





Before I go let me just tell u girls that Mr 'Aid" hit my "G" spot.. hes young... hes smooth.. he gyrates swiftly in all directions and he knows how to mix it all up. I'm one happy, contented, exhausted woman who looks forward to seeing 'him' everyday .. wink wink .. muahahahaa
