BBP & ORD


Its been a super long day today and i dont intend to stay up late .. been awake since sahur.. baked two types of layer cakes.. one is for an order and another layer cake which i will make a separate entry tmrw..

Today was my son's special day.. the day he calls "freedom".. yes we are talking abt his ORD (Operational Ready aka finishing his National Service)... two years ago i remember posting an entry abt him doing his national service and today i am doing an entry abt his ORD.. time and again.. i am just amazed of how time flies... as i walked towards the parade ground.. all i cud think of was how proud and blessed I am to hv him as my son... :o)

It lasted up to 8pm and we had our iftar while watching the parade... love the pic of hb and hairi.. i can still remember the first time i took pic of both of them... hairi was only 10 back then and 10yrs on hb has lesser hair and looks much more older and the most important thing of all.. hes not wearing RM William jeans! muahahaha

Bef i go... heres the recipe to this delicious bread and butter pudding.. mom loved it to bits.. hairi and hb had two servings each and mom got the last piece for her to indulge today...

Ingredients (serves 6)
50g unsalted butter
12 slices white bread
50g sultanas
4 eggs plus 4 egg yolks
175g caster sugar
300ml thin cream - i used full cream milk
300ml thickened cream- i used double cream
1 vanilla pod, split, seeds scraped
3 tbs thin-cut marmalade - i didnt even bother to do this step!

Method
Lightly butter a 2-litre baking dish. Butter the bread, remove the crusts, then cut each slice into 2 triangles. Arrange triangles in layers in the dish, then sprinkle the sultanas in between layers. Don't put any sultanas on the top layer as they will burn.
Whisk together the eggs, egg yolks and caster sugar. Place both creams in a saucepan with the vanilla pod and seeds and bring to scalding point. Pour cream over the egg mixture and whisk lightly to combine. Strain mixture over bread slices, making sure not to dislodge them. Set pudding aside for at least 30 minutes - this ensures that the pudding will be light and not stodgy.
Preheat the oven to 180°C.
Place the baking dish in a large roasting pan and pour enough boiling water into the pan to come halfway up the sides of the baking dish.
Cover the dish loosely with foil, place in the oven and bake for 15 minutes. Remove the foil and bake the pudding uncovered for a further 15 minutes or until golden
Heat the marmalade in the microwave for about 40 seconds or in a small saucepan over low heat for 1-2 minutes until spreadable. Remove pudding from oven and use a pastry brush to spread marmalade over top. Return to oven for 2-3 minutes, then serve immediately.

1st of all, congratulations on your son's graduation from the National Service.

I nak tanya about Lemon Crispy Cornflakes. I tried it today but the cookies turned out to be a bit 'rapuh' while the cornflakes remain crunchy. Is it supposed to be like that? Or the cookies were supposed to be keras? I would prefer the cookies to be a bit keras, how do i fix that?

By the way, the cookies were my son's first meal for iftar today, alhamdulillah, makes it all worth it.

I emailed you earlier about this, but hopefully i can get a quicker reply from this comment box.

Rajin betul lah u cik som.. semenjak hairi masuk NS i no longer makan nasi waktu pagi.. cuma makan cereal and orange juice and makan kurma.. once hairi is no longer on standby i will hv to start masak nasi again for sahur

Yes its supposed to be "rapuh" .. not a keras type of cookies.. even the batter macam buttercream kan.. i am not too sure if u add more flour to it.. the cookie will rasa sedap cos its meant to be "rapuh"..

I will try the famous amos cookies as you suggested in your email, cuma i am not sure if i can find coffee oil in Brunei, will cari later. I read in the comment page, ada yang ganti dengan coffee emulco, will try it nanti.

Anyway, i read you BBP recipe. Kalau tak pakai vanilla pod, berapa banyak vanilla essence yang digunakan?

I just remembered one of my hubby's close friend owns a bakery here in Brunei. so i had my hubby called his friend, he thinks ada in store and currently checking. Kalau not available then I will order from you.

By the way, i have a very,very basic question. Is there any difference between butter and margarine? eg can i use planta margerine instead of butter?

I found coffee oil here, so I tried the famous amos cookies..we love it...my daughter just ate 3 and I'm down to the last quarter of the jar now...Alhamdulillah

Anyway, I come across your crunchy chocolate chips cookies..nak tanya, at what point do i add in the white chocolate and almonds?

the best bbp i've tried. thanks 4 d recipe. next time i'd tweaked it to reduce amt of sugar - a bit too sweet 4 me. didn't have raisins - add cranberries instead so nice!
