Iftar was at mom's place today and this was one of the desert that i've prepared for iftar besides bubur cha cha and fried sardine bun..

For some reason today i feel like eating this kuih.. err well i know i can always go out and get some but its just not the same when i get to prepare it on my own .. best part.. i get to add in as much filling as my heart desire heheh... LOVE the texture of this kuih.. its soft and taste yummy! tks bro rozzan



Ingredients
2 cups coconut cream (i used 200ml KARA + 250ml water)
5 eggs (grade B)
150 gm flour
1 tbsp cooking oil
1/2 tsp salt
green colouring

Coconut filling:
250 gm. grated coconut
30 gm. castor sugar
100 gm. gula melaka (palm sugar)
30g dark brown sugar (i added)
60 gm. water
1 tsp. cornflour
2 pcs. pandan leaves - cut into small pieces

Method:
For filling
Cook sugar, gula melaka and water in a wok till sugar melts.
Add in grated coconut and pandan leaves and fry till dry.
Sprinkle cornflour on top and stir till well mixed.
Cool before using.

For the crepe
1. Mix egg first bef adding all the other ingredients .. mix until the batter is smooth. Heat up a non-stick pan, brush the pan with a bit of oil, pour some batter to the pan and swirl the pan around so that the batter completely covers the base.
Cook the crepe until you see the side is lightly brown and crispy. Flip it over and cook the other side for about 20 second. Remove from pan.

2. Put some filing on the pancake and roll it up like a spring roll. Serve as dessert or for tea time.

This was what i baked earlier today.. ( fyi: most of what i've baked i share it among Lyn, wati and mom).. Mom had requested for butter teddy cookies cos she likes the rich buttery taste of this cookie... err well its more abt serving the kids during Eid.. u can get recipe fm my previous post..

I am gonna try to keep this short... its been a very very long day today... Sonia was super fussy last night and woke up several times.. i think i must hv dozed off at 2am bef waking up again at half past 4 for sahur.. sigh... am so so tired and sleepy that i dont even know what i'm blogging abt lol

Anyhow i managed to do some packing.. took abt 4hrs to clean and pack up Hairi's things!! so much junk.. boys!! i also managed to bake Makmur cookies..

To be honest, i am not a big fan of makmur but i make sure i bake it every single year during Eid... weird.. i know...but a table full of Eid goodies wouldnt be complete without pineapple tart and makmur..



This year i decided to use a different recipe for Makmur.. Sorry mom.. i know we hv been using ur recipe for years but i thought i'd try out a different one?? oh by the way moms recipe is the oldish kind?? the 1 butter, 1 egg, 1 pack of flour (estimate) and yellow colouring kinda ingredients..   

So back to this recipe.. i thought i'd gv Sis Rossy's recipe a try.. and my verdict? well it tastes slightly different fm mom's simply cos this recipe uses ghee.. i like the crunchy filling tho.. so overall.. i am glad i gv this recipe a try..

Ingredients
250g QBB Ghee
250g butter
1 tsp castor sugar
pinch of salt
2 egg yolks
1 egg white
1 tsp vanilla essence
800g flour (i had to use a little more as dough was too sticky)

Filling: Mix together
300g cashew nuts (fried and pound.. not too fine)
400g granulated sugar
100g melted butter
(Filling ended up too much... half recipe of filling will do)



Method:
(1) Cream butter, ghee, salt and sugar till creamy. Add in eggs
(2) Add in flour (700g first) and mix till a dough is formed.
(3) Roll cashew nut fillings into small balls.
(4) Pinch some dough, roll thinly and wrap up with peanut filling. Make into an oval shape and then use pincher to press into leaf-like design. Place onto baking tray.  
(5) Bake in preheated oven at 160C for 20 mins.
(6) Remove and cool a little before dusting with icing sugar.
(7) Cool and store in airtight containers.

Note: Instead of cashew nut filling, u can substitute with peanuts, dates or prune

I think by now u guys must be saying... chocolate chip cookies again Rima???? hahhah... ok ok ok.. not gonna bake this type of cookies again till after Eid?? :op.. I started baking right after morning prayer.. Hb calls it "brittle cookies"... i call it "krap krup cookies" hahaha

Will not post recipe as u can get it in my previous post... love love love this cookie!! oh this time round i decided to bake it at 160C for 25mins...

This chocolate chip cookies recipe has been with me for almost 26yrs now.. it was given to me by my best friend, Satilla... we went to secondary school together.. we did lots together... we even went on double dates together hehhe... those were the days where u didn't gv a hoot if ur hair was curly lol... no rebonding needed cos really back then who cared abt straight hair anyway..

And boys... there were two types of boys.. the daring and the coward type hahha..they either will approached u face to face or threw a piece of paper with their phone nbr after they alighted fm bus just to get to know u personally (there's a boy fm upper aljunied school.. threw a crumpled paper to me when i was on a double decker bus hahhaha)  

I became "famous" because of this chocolate chip cookies muuahahah... every single year during Eid and CNY.. i received lots and lots of orders fm ppl.. sadly i stopped taking orders 5 or 6yrs ago when i finally had enough baking cookies after cookies during Eid hahha..



Soooo without further ado... here is the long awaited recipe that many many ladies out there had been asking for... some had to wait for 20yrs hahahah... ty Satilla for the wonderful friendship... ty for being there when i needed someone to talk to back then... ty for making me the "most saught" after (sure sure hahhaa) when i started baking this cookie :oP

NOTE: This cookie recipe is very versatile.. u can just leave it as it is and u get butter cookies.. use  chocolate chip and almond nibs and u get chocolate chip cookies or u can use the same dough to bake rocky road cookies.. or add M&M and u get M&M cookies...or add raisins to it and u hv rock bun .. u can even add oreos to ur chocolate chip cookies.. (i used 9 pcs of oreo cookies.. crushed and mix into dough)  whatever u choose.. i promised u will like what u picked! 

Ingredients
400g self raising flour
230g castor sugar
250g butter
1 tsp vanilla essence
2 tsp chill water
1 egg
a drop of yellow colouring



Method
Using stand mixer.. cream butter and sugar till pale
In another bowl, whisk egg and yellow colouring with a fork
Add in egg mixture, vanilla and chill water till incorporated
Add sifted flour a little at a time till well combined
Dough is ready



Chocolate chip cookies
50g almonds nib (toast)
100g chocolate chips

Baked in preheated oven of 180C for 20mins

He did it!! after countless warning.. after constant nagging.. Hairi finally had his hair cut.. err not bcos of us.. its more abt National Service... well he doesnt have to cut his hair  just yet cos they will hv his hair cut anyway.. but he wanted to do it bef this friday so that hes mentally prepared for it... well good choice my son! you looked good... you looked like a clean kid... u sure looked like a 19yrs old boy heheh

Hairi has been keeping long hair ever since he started playing in a band group.. dont asked me whats his band name cos i dont even know how to spell it hahha.. hes been with Yamaha learning acoustic and electric guitar for 5yrs now and is the lead guitarist in his band.. is he good?? yep yep... hes bloody good at it! now that he gonna be stuck in the army... he had no choice but to quit fm Yamaha and no gig for 2yrs... err  i guess..

Just a quick one.. need to prepare food for iftar.. gonna go to mom since today and tmrw hb will not be joining us for dinner..

Managed to bake another type of cookies for Eid.. wooohooo i am on the roll... best part i can bake and bake and bake without anyone telling me "eh u not tired ah..." :op 



Okie i dont know how it taste like.. all i know this almond cookie has that melt in ur mouth texture..it was rated 5* by those who had baked it.. will let u know my verdict after iftar.. recipe fm Kak Intan

My verdict: Yep its a melt-in-ur-mouth type of cookie, full of flavour.. mom likes it.. i do too.. this recipe is a keeper!

Ingredients
1kg flour
350g ground almonds
400g sugar (grind)
1 tsp baking powder
1 tsp baking soda
pinch of salt
2 3/4 to 3 cups of oil (i used canola oil)

Method
Mix all ingredients except oil
Add oil bit by bit.. (i used 2 3/4) till soft dough form
Roll into small balls and flatten top
Bake in preheated oven of 160C for 20mins

Guten Morgen!!! I am feeling way much better than yesterday.. had a good sleep and been up since half past 4am.. i decided to start early today with err what else.. my love for baking and not packing hahha.. (since i am not in the mood to pack i better start baking for Eid)



Let me tell u something abt this suji recipe.. i got it fm Lyn's MIL.. for some reason i hv never trusted other suji recipe other than hers.. its like i will try other recipe but when it comes to baking for Eid.. i wud always stick to her recipe.. why?? simply cos this cookies wud be the first to finish.. simply cos our chinese and ang mo (caucasian) friends loved it.. simply cos its suji heheh.. so why wud i wanna use different recipe ey.. FYI this recipe has been in my 20+ years folder since like 8yrs ago.. since the day Lyn got married to my BIL hehhe

Ingredients
1 small can of QBB ghee (150g)
2 1/2 cups flour (add more if ur dough is still too soft) 
1 cup of icing sugar
1/2 tsp salt



Method
With a wooden spatula, cream ghee with icing sugar till combined
Add sifted flour and salt bit by bit (pls add 2 cups first and see if texture is too soft .. if so add another 1/2 cup a little at a time till u get the right texture) 
Roll dough into small balls and place it into papercups (sometimes i wud leave it as it is.. depending on my mood :op)
Place cut cherries on top and bake in a preheated oven of 160C for abt 15mins
(u get abt 75pcs out of this recipe)

Whats with Monday that makes me really really not in the mood to do anything... i only managed to pack 2 big boxes of Hairi's stuff.. didnt even wanna continue anymore cos really.. who likes to pack and unpack stuff.. if only i cud just move house without having to do all the dirty job!

Ok ok stop whinning Rima... i decided to bake cookies for the sake of trial and error.. FYI besides pineapple tart, i love munching on mar mar carries (only during Eid tho).. i do hv a specific recipe that i hv been using err once a year?? hehehe..unfortunately i cant find it in my folder anymore.. :o(



Anyhow this recipe is fm Lilydvalley of MYR.. dont know if it taste the same.. will gv feedback later after iftar.. my verdict: taste abt the same.. i hv another mama carries recipe that wud love to try if i hv the time.. otherwise this is good enough for me :o) 

Ingredients
300g butter
375g all purpose flour
130g corn flour
100g icing sugar
1/2tsp essence vanilla

Topping
1 egg white
100g icing sugar
1tbsp corn flour
Chocolate emulco for decor



Method
Sieve flour and corn flour and put it aside
Cream butter and icing sugar 
Add in vanilla essence
Add sieved flour bit by bit till soft dough is formed 
Roll dough into 1/2 cm thick and cut using cookie cutter of ur choice. Arrange cookies on a tray lined with greaseproof paper 

Topping
Beat egg white till fluffy.. add in icing sugar and corn flour.. mix well to form a smooth paste

Spread topping on each cut out cookies.. for better result use ur finger to do the job.
Dip a toothpick into chocolate emulco and sketch on top of the topping
Baked in preheated oven of 150C for abt 17-20 mins

Anyhow.. our drive back fm kl was a smooth one.. we decided to check out at noon cos mom wanted to go to Angsana in JB.. she bought Eid cookies, bought curtains.. bought yadda yadda yadda.. the ramadhan bazaar there was HUGE.. lots of ppl.. mostly singaporean hahha.. anyway hb decided to drive back early to avoid the bad traffic (we were still stuck for more than an hour at jb custom) we finally reached mom's place right bef iftar and decided to hv it at moms with the food that we bought fm Angsana..
