Lemon Baked Cheesecake n Alessandro to go...




Phewwww what a weekend we had... pretty much most of our time was spent outside.. we went to the Barista championship to witness Singapore's top baristas... very entertaining with a free flow of whatever coffee u want! niceeeeee!!

We also met up with "cough cough" the "bro association" for dinner and coffee and spent the night till the wee hours... Sonia had fun cos for a change mama and papa allowed her to stay up till late lol.. we also had to go to several places in search of a few party things for this weekend.. I can already sense how busy its gonna get this week... err well it started today actually...







I shud hv called this cake Alessandro cheese cake cos i baked it especially for him .. ahem ahem... who is Alessandro.. u may ask... well he is my Italian stallion... muuuahahahhaha... ok ok a little crush wont harm anybody right especially when hb knows abt it.. no?? whatever lol... was super excited when hb told me that hes coming by for a visit... well he flew in fm Italy for a meeting with hb and had a few hrs on hand bef his next flight.. so hb thought its a good idea to take him home so that his wife can feast her eyes on her sexy Italian stallion ahahaha.. ok ok behave Rima!!!







Anyway this is what I baked today, Lemon Baked Cheesecake... had wanted to bake my fav cheesecake but it would need at least 6hrs of chilling bef i cud pour in chocolate mousse and ganache... oh well... this cheesecake is equally delicious too .... so said Alessandro .. "blush"... recipe is fm Baking Code by Alex Goh.


Ingredients
Chocolate Sponge Cake
(A)
2 egg yolk
8g sugar
1/4 tsp vanilla essence

(B)
2 egg white
50g sugar

(C)
42g plain flour
8g cocoa powder

(D)
25g corn oil

Method
Whip ingredients A till light and fluffy
Whip egg white till soft peak and add sugar in 3 batches
Mix the egg white mixture with ingredients a till well blended
Fold in ingredients D and mix till well combined. Add in corn oil and mix till well incorporated
Pour into a greased 7" round mould
Bake at 180C for 20mins







Ingredients
(A)
250g cream cheese (room temp)
20g sugar
1 orange zest (i used lemon zest)
3 egg yolk
30g orange juice (i used lemon juice)
80g sour cream (i used yogurt)
25g plain flour

(B)
3 egg white
55g sugar

Method
Grease and line the sides and bottom of a 7" round mould. Base a greaseproof paper. Wrap the outside of the mould with aluminium foil.
Cream ingredients A till light. Add in egg yolk one at a time and cream it till smooth.
Add in orange juice and sour cream and cream it till well blended. Add in plain flour and mix till well combined.
Whip ingredients B till soft peak stage
Mix the whipped egg white with the above cheese mixture till well incorporated.
Place sponge cake at the bottom of the mould. Pour the cheese mixture over the cake.
Bake in water bath at 160C for an hour (i baked mine at 150C for 50 mins)

Had wanted to take a photo of him but macam shy shy kucing lah...i shud hv ask hb to take a photo of him and sonia.. that way i can drool over his photo any time of the day... opppss shhhhhh hahaha

Hi kak irma,
Ingredients for Cheese cake tu, kak irma replace it with yogurt, that is mean plain yogurt?
For plain flour tu, can i replace it with superfine flour?
