Hello Weekend!



Hope you had a good friday peeps.. dont u love it when ur weekend is just abt to start? well to me at least.. today we took my SIL and her friend to JB for dinner bef her trip to KK tomorrow.. am feeling so much better today.. tks for the doas.. I woke up on the right side of the bed this morning and i feel good.. Sonia no longer has any fever.. her temp this morning was 36.3C .. Alhamdullilah.. Pictures of our great seafood dinner will follow tomorrow!




Anyway this is the cake that I baked yesterday.. my all time fav lapis legit.. be it with prunes or not.. i loveee it! ty ty ty Cik Mat for sharing this super wonderful recipe and of cos the tag (will pick it up soon ok)... am honored!

Ingredients
(A)
250g butter - i used golden churn
80g of sweetened condensed milk
1 tsp mix spice
1/2 tsp powdered vanilli
80g golden syrup

(B)
15 egg yolks
3 egg whites
120g caster sugar
80g hong kong flour or superfine flour
1 tbsp ovallete
20 ml of cold water

(C)
A few drops of yellow colouring
150g prunes, cut in half and flatten
Melted butter to spread

Method
Greased cake tin measuring 8 x 8 x 3 inches with butter.. Set aside.
Whisk (A) at high speed for 5-7 minutes until fluffy and well mixed. Set aside.
In another bowl.. whisk (B) at medium speed for 10 minutes till fluffy..
Combine A and B mixture, mix well and add yellow food coloring. Stir until smooth. Preheat the oven to 180C
Weigh ur batter and divide it to the number of layers u want.. mine weigh 70g per layer and i get 15 layers for this recipe.
Bake it using grill mode.. 7 mins for each layer
Bake last layer using upper and lower fire for abt 10mins

this is miles away from kek lapis beli :) Not only gorgeous but super duper delicious! It pays to use good ingredients.... (From Rima's hubby)

Rima,

I've tried the layer cake, but somehow the top of each layer don't want to brown. It will puff up and separate from the layer underneath it. If I leave it to brown, it will become dry and ugly. I put my pan in the middle layer. What did I do wrong?

Did u bake it using grill mode for every layer?? i hv never encounter something like that.. first layer u hv to bake it using upper and lower fire for 10mins.. then for every other layer u use grill mode and bake it for 5 to 7 mins.. depending on ur oven.. last layer u bake it using upper and lower fire for 10 mins which consist of 7 mins on lower and upper.. and 3 mins on grill mode.. thats it.. and oh yes.. i place my baking pan on middle layer too.

Can i substitute the golden syrup with honey?
Also, can i omit ovallete?

i hv never sub golden syrup with honey however i hv tried using both after i found out that i didnt hv enough golden syrup hehe
