Thank you so much for the well wishes.. I am good.. in fact i feel so good that i managed to do lots today.. ironing (blueekkk).. housework... laundry.. cook.. etc etc etc... the only thing that i didnt do today is baking hehe
As you already know that hb has been back to work since Monday and my daily routine is back to normal... i must say its nice to be "back to normal"... ya know.. wake up, sholat and prepare brekkie for hb.. sometimes i get to blog hop bef Sonia gets up at 9ish.
Dont ask me for the Croissant recipe cos i didnt make em.. i usually will get the frozen ones fm Swiss Bakery and hv it baked bef having em for brekkie and sometimes for lunch too hehe
Once shes up i will be busy with her.. entertaining her.. play puzzle with her.. watch telly etc etc etc bef she goes to bed again for her afternoon nap for approximately 3 to 4hrs hehe.. ahhhh during that time her mama will turn on her "fast mode" to finish up her housework, cook and bake and also take pics of what she bakes.. once all that is settled.. I will make myself a cup of coffee and hv my lappy on my lap bef little Sonia gets up at 5 or 6pm.. just on time bef papa gets home fm work.. that half an hr sitting alone and having coffee is precious to me.. ahhh what bliss...
Anyway long story short since i had to do lots today.. i only managed to prepare this desert... well preparing this desert is a little time consuming BUT its really not that difficult.. the only difficulty that u might encounter is to find a super sweet mango!
Ingredients:
Bottom layer - Panna Cotta:200g whipping cream - i used double cream
30g caster sugar
1 tsp gelatine powder
2 tbsp cold water
1 tsp vanilla essence
The middle layer of fresh mango pieces:
100g mango puree
25g caster sugar
1 tsp gelatine powder
2 tbsp cold water
1 mango, peeled, take the meat, cut into small squares
Mango puree:
1 mango, peeled, take the meat, blend until smooth - i used 4 mangoes to get 250g
Upper layer-Mango Mousse:
150g mango puree
1-2 tablespoons orange-flavored NutriSari - i didnt use but instead add 30g of sugar
1 tsp gelatine powder
2 tbsp cold water
120g whipping cream, whipped stiff
Method
1. Bottom layer -Panna Cotta: Warm the whipping cream and sugar in a saucepan over medium heat. Meanwhile, combine gelatin powder and cold water in a container, stir well, then microwave on high for 1min.. stir.. pour gelatine mixture into whipping cream and stir well.. let it cool a little and add in vanilla essence and stir well. Pour into molds, place it into the refrigerator until set.
2. The middle layer of fresh mango-Pieces: Warm the mango puree and sugar in a saucepan over medium heat. Meanwhile, combine gelatin powder and cold water in a container, stir well, then microwave on high for 1 min.. stir.. pour gelatine mixture into mango puree, stir until well blended. Lastly add mango pieces and stir well. Pour one tablespoon of each into cups containing PANNA cotta. Place it in the refrigerator until set again.
3. Upper layer-Mango Mousse: Warm 2 tablespoons mango puree and NutriSari in a saucepan over medium heat .. (warm mango puree and sugar over medium heat). Meanwhile, combine gelatin powder and cold water in a container, stir well, then microwave on high for 1 min.. stir till well blended. Add gelatine mixture into mango puree, stirring until well blended. Pour 1/3 part of whipped cream into mango puree and stir through gently. Pour back the mixture into the remaining whipped cream, stirring slowly. Pour mango mousse into a pipping bag and pipe into the cup containing PANNA cotta and pieces of fresh mango. Place it in the refrigerator until set again.
4. Served cold!
The moment hb got home fm work.. i pulled him into our kitchen.. took out two glasses of Mango delight and handed it to him.. he ate one spoon after another and there was this total silence among us.. once done he gave me that wide smile and said.. Waliooooo.. muahaha.. The taste of this mango delight is simply awesome... it has the richness of panna cotta, the sweetness of the mousse and the sourness of the mango pieces! awesome.. awesome... ty Heramesayu for sharing this super wonderful recipe!
Oh bef i go.. Hairi and his band are on their way to Peninsular Malaysia on the invitation of a show organizer to play at gigs in a few cities (Kajang, Ipoh & Penang).. hv a safe journey my son and be safe!

Untungnya u Sonia boleh tido 3-4 hrs in the afternoon. Jannah nak kasi afternoon nap punyalah susah. 1 hr to force her to sleep and she only slept for 15-30 mins boo hooo :( jeles aiii........hehehez

Hello!! I'm making this today because my dad's boss is coming over for dinner and I wanted to make some dessert that was special. In fact it's in the fridge right now, I'm doing the third layer when the mango puede and mango pieces are set. It tastes delicious already!!!!! Thank you so much
