Heres the kuih that was prepared this morning.. apam dot dot and also coconut blossom.. for some reason my apam dot dot has lots of "holes" unlike her sister, coconut blossom, who has a super fine skin hahahha.. oh well... the bottom line is.. my apam was well liked hehehe
Apam dot dot
Igredients
3 cold eggs
275g flour
220g sugar
150gm fresh milk
3 tsp baking powder
1 tsp ovallete
1 tsp vanilla essence
Blueberry filling (I use blueberry jam - heat up and place it in piping bag)
Food colouring of ur choice
Method:
1. Beat all the ingredients together until thick and fluffy.
2. Scoop 1 Tbsp. of batter into mould (lined with paper cup), top up with a dollop of blueberry filling and then another 1 Tbsp. of batter. (I used piping bag to pipe out my batter)
3. Steam over medium heat for 15 mins.
Coconut Blossom
Ingredients
3 cold eggs
250 gm. sugar
10 ozs. (about 280 to 300 gm.) Softasilk flour or any superfine flour (Hong Kong flour)
2 1/2 tsp. baking powder
1 Tbsp. ovalette
130 gm. (5 ozs.) coconut cream (can buy the box coconut milk e.g. Kara)
30 gm. pandan juice (blend about 6 pandan leaves) (i opted)
1 tsp. pandan paste
(i used 160g coconut cream and 1tsp pandan paste)
Method:
1. Beat all the ingredients together until thick and fluffy.
2. Scoop 1 Tbsp. of batter into madeleine mould (lined with paper cup), top up with 1 tbsp. of coconut filling and then another 1 Tbsp. of batter. I used piping bag to pipe out my batter
3. Steam over high heat for 15 mins.
Coconut fillings
Ingredients
250 gm. grated coconut
30 gm. castor sugar
100 gm. gula melaka (palm sugar)
30g dark brown sugar (i added)
60 gm. water
1 tsp. cornflour
2 pcs. pandan leaves - cut into small pieces
Method:
(1) Cook sugar, gula melaka and water in a wok till sugar melts.
(2) Add in grated coconut and pandan leaves and fry till dry.
(3) Sprinkle cornflour on top and stir till well mixed.
(4) Cool before using.

hi there =) i see that you place your paper cups into moulds.. what kind of mould did u use? and wats the purpose? is it to prevent the paper from getting wet due to the steam? im sorry if my questions are nonsensical... im new at making these blossom cakes.. =)

I used ur typical mould that u can get at any baking supply shop.. its to prevent ur papercups fm getting wet and at the same time to hold on to its round shape.. without the mould ur cake will turn out flat ..

Did u removed it right after its cooked?? did u used a medium high fire?? hmm why do u hv to steamed it for half an hr??
I tried steaming it for abt 10 min d first batch, it was wet, uncooked the bottom esp, But the top was rather nice ;) den d second one i tot was too early so i try steam 15 min.. But same thing ;( so i ended up to 30min lolx!! But d same thing... Do u think its my flour? I used superfine by Prima ? --has

hi,,may i know what is the mould's name..i'm using a small tart case, but the shape does not look s round n pretty s yours..the papercup u use is the smallest size right?? size 1 i think??

I am sorry but i am not too sure if the cupcake size is size 1 or not.. the mould u can get it fm all bakery supply shop.. its made out of plastic and meant for kuih lompang..

Hi there! u can get it fm any supermarket here in singapore.. baking aisle .. or u can go to any bakery supply shop.. phoon huat, sun lik to get it..

How do u make the dots on the coconut blossoms? Is there any special utensil to use or did u just use the same piping bag? And the dots should be made prior to steaming? As in at the stage together with the raw batter in the mould?

nope.. just use disposable piping bags.. divide ur batter into a few parts.. colour them and pour it into each piping bag.. once ready.. u pipe in ur main colour.. followed by the dots.. once done.. u steam it..
