Fruit Pastry Cake




I hv not baked this cake for like half a year now...so last night while blog hopping i saw this cake in Anncoo's blog and what did i do?? I decided to bake it again.. this is one of my fav cakes.. in fact any cake that has fruits.. I likeeee hehhe... hmmm I am gonna put up the recipe for the 3rd time now.. ya know just to encourange others to try and bake it hehehe



Ingredients
100g Butter, soften at room temperature
200g Caster sugar (I cut down to 180g)
50g Sour cream (2 tbsp) (I used low fat yogurt)
3 Eggs, lightly beaten
1 tsp Vanilla extract
1 tsp Lemon or orange zest (i used lemon)
210g Plain flour - sifted
1 tsp Baking powder (I used double acting baking powder)
500g Fruits tossed with 2 tbsp sugar
(You can use strawberries, blueberries, peaches, bananas, pearls, apples, pineapple, or any other fruits that are not too juicy.) - I used strawberries, peaches and prunes this time round




Method:
- Wash, cut (chunks or slice as desired) and drain fruits, toss with sugar (if desired) and set aside. (if using canned fruits, wash the fruits to remove syrup, omit the sugar).
- Grease with butter and flour the side of a 9" round pan or a 8" square pan and line the base with parchment paper.
- Cream butter, sugar and sour cream till light and fluffy.
- Dribble in the eggs gradually and beat till incorporated in the batter. (The mixture appear slightly curdled)
- Add vanilla extract and zest.
- Dump in sifted flour and baking powder and continue to cream the batter with mixer until smooth. Pour batter into prepared pan and smooth out the top with a spatula.
- Arrange fruits on top, don't press the fruits down into batter. Decorate the fruits as desired.
- Bake in preheated oven at 180C for 60-70mins or until skewer comes out clean when inserted into the cake. Cover the top with foil in the last 15 mins of baking to prevent the top from getting over browned.
- Leave the cake to cool in the pan for about 5-10 mins. Unmold and transfere to wire rack to let cool completely.
- Dust the cake with some icing sugar if desired. (I used snow powder for dusting)





You can use a 9" pie dish or flan dish if u want.. I used a 8" square pan this time round and decided to chunk strawberry, peach and prunes for topping.. check out my two other entries here and here... Dont u think this time round my fruit pastry looks like pizza?? muahahah

The cake looks so delicioso!! mana ajer u dapat strawberry comel lote ni??? kat sun moon jual I think usa ke korea, punyalah gedabak..BTW, mana nak dapat tu double acting bkg powder..mana ajer u beli, is it sun lik yg belum ku terokai itew???

rima, nak ty, sour cream tu ade jual kat supermarket eh? so far i x pernah buat cakes yg pakai sour cream.. kena try ni! (panjang sungguh my list of 'kena try '!)

Yat.. I memang fav kek ni.. Kalau tak betul2 i can finish the whole cake.. Bukan sekali harum ye.. Tu muntah kedarah namenye hahaha.. Makan a slice a day maksudnye.. But usually i cuma tinggalkan 1/4 cake for my family.. Yg lain i bagi2 kan.. Tu strawberry i beli kat pasar malam kat AMK central.. Kecik kecik n red but tak manis sangat ah yat.. Si double acting baking powder i beli kat sunlik.. To be honest i jarang beli baking stuff fm phoon huat.. Kalau i buy something pun their double cream cos sunlik tak dak..

Edi kadang gambar desert lah yg buat kita stress free.. Baking buat kita terus stressless hahaha ade word tu ke hahaha

Sour cream u can get it kat supermarket.. Usually cake yg pakai sour cream produces cake yg lembut n enak.. If u cant find sour cream u can use yogurt.. I lupa nak letak that this time round i used low fat yogurt.. Konon nak diet muahahaaaa

betul tu rima, baking just for the sake of baking mmg boleh de-stress.. tapi kalau baking for biz, kadang2 lg stress adelah! hehehehe.... altho most of the time seronok sbb org bayar kita utk buat apa yg kita enjoy buat, but there's still pressure to do our best sbb org tu bayar kita kan.. x baik pulak kalau buat sambil lewa...

Been there done that Edi.. Dulu as in 10yrs ago i memang take orders.. If now ade yg nak order i akan kata.. "biar mak pikir dulu" hehehe.. If u bake for orang memang lain rasanye.. Ade certain expectation fm them n on ur part u want to gv them ur best work but sometimes bec of that u lagi stress.. :(

Yes I agree I agree I agree.

Setahun I baked cupcakes melayan order jirans n close friends. I was so passionate until I rasa letih when orders keep on coming in. Ngada2 I nih walhal I baked the simplest cupcakes ever *with a tinge of my own creativity*. Tulah kalau hati dah tak sayang, hahaha..

Salam Rima, I know this is an old post but just wanna let you know I've tried this recipe & I find it easy & I really like it... Its not heavy & not too sweet like kek kukus buah. But unfortunately, I pakai canned fruits so the colours are not as vibrant as yours. Tapi yang penting its so sedap.... I myself cant stop eating it... Thanks Rima...
