Best Aglio Olio


I love food. I love to critic abt it too. Basically.. I wont turn away fm good food. Eating good, delicious food is like having great sex. Right? Gulp!! Because of my obsession and love of food, I am always on the quest of finding good food.

Thus, this brings me to this subject...Finding the BEST Aglio Olio. I love Aglio Olio. Love it. However, I find that not everyone or every restaurants cook it the way I like it. I love mine with tons of garlic and slightly salty.

I hv tried having it in every restaurants here that serve Aglio Olio and nothing come close to the one i had in Turin, Italy... and there was this once when hb took me to one of the local restaurants and I had Aglio Olio.. Pathetic!!! I feel like I'm eating pasta tossed in olive oil and nothing else.

I have yet to find the best Aglio Olio.....well...besides my own? (can I brag?) I made mine using Rachael Ray's recipe. Love her. Her Aglio Olio recipe has the right punch... garlicky, slightly spicy and has a salty and nutty flavor to it. Secret ingredient?? Anchovy fillets!!!!!! (note to all restaurants)

Recipe adapted fm Rachael Ray

Ingredients
1 packet whole wheat spaghetti
5 cloves garlic, minced
1/4 tsp crushed red pepper (or more...according to your taste)
1/4 - 1/3 cup extra virgin olive oil
5 anchovy fillets
A handful fresh flat leaf parsley, chopped
Freshly ground black pepper, to taste

Method
Cook pasta until it's al dente. Drain.
In a large skillet over medium heat, add olive oil.
Cook garlic and pepper in until it speaks.
Add anchovies and stir them in oil with a wooden spoon until it disappears.
Toss drained pasta into the pan.
Coat the pasta evenly with the garlic, oil and anchovies.
Add parsley and black pepper.
Toss and taste.
Adjust salt and pepper, according to your taste.


Oh talking abt food... I'm still thinking of what to prepare for dinner.. hb flew to Vietnam yesterday and Hairi is in camp... I took Sonia to Go Go Bambini earlier this morning and had our lunch there... maybe a good Aglio Olio for dinner might just do the trick?? hmmmm
