Chocolate Chip Banana Bread

Eeeeeep! With very little time at hand and loads of other stuff to attend.. i finally sorted my time and started baking again!

I adapted this recipe from I can't rave about this recipe enough! It definitely deserves the 5 stars it got on allrecipe. The bread is so moist and flavorful. The chocolate chips accent the banana perfectly. You've gottta give this a shot, it's so easy to make too! I replaced the mayo with milk because.. mayo's = gross (no offense) heheh

1 cup shortening (I used unsalted butter)
2 cups white sugar (I used 1 cup of white and 1 cup of brown sugar)
2 eggs
2 tablespoons mayonnaise (I used milk)
6 very ripe bananas, mashed
3 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
1/2 cup chopped walnuts (I used almonds)

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.
Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely.

Nampak sedap...but still no time to bake ...
By the way no more pandan leaves behind the cake ek? Dah settle down in the new home?

Sob sob.. no more pandan leaves.. no more garden... we moved to a cluster house (a house with condo facilities) so the gardens are mantained by the developer.. senang for me cos i tak payah jaga "kebun" anymore heheh..

Memang sedap cake ni.. moist and supersoft.. try if u hv the time yah..
