Marble Cupcakes

Sooo, I bought the new Martha Stewart Cupcakes book. And boy, was I pleased with it. What I love about this book is that it contains tons of recipes of different cupcakes... not just how to decorate them, like many cupcakes books have.

And so, my first cupcake off the book is the marble cupcakes.. why?? cos i love a cake that can stand on their own.. no frosting, fillings or glazing needed.. Simple as that.

It's really easy to make and delicious too, the texture is a lot more moist after a few hours .. if u like u can always drizzle cupcakes with milk glaze or top with dark chocolate frosting... i prefer mine naked hahhah

And oh, did I mention that I accidentally added 2 cups of cake flour instead of 1 3/4 cups?? err well i did! Thank goodness my naked cupcakes still turned out delish! Phew...

Ingredients(yield 26 pcs)
1 3/4 cups cake flour
2tsp baking powder
1/2 tsp salt
1/3 cup milk (room temp)
1/3 cup heavy cream (room temp) (i used whip cream)
1/2 cup unsalted butter (113g)
1 cup sugar
3 large eggs (room temp)
1 tsp pure vanilla extract
1/2 cup unsweetened dutch process cocoa powder (i used varlhona)
1/4 cup boiling water
Confectioner's sugar for dusting

Method
Preheat oven to 180C. Line standard muffin tray with paper liners. Sift together flour, baking powder and salt. Combine milk and cream.

With an electric mixer on medium high speed, cream butter and granulated sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. Add vanilla. Add flour mixture in three batches, alternating with two additions of milk mixture, and beating until combined.

To make chocolate batter, measure out 1 cup batter and transfer to another bowl. Combine cocoa and the boiling water in a bowl. Stir into reserved 1 cup batter.

Fill prepare cups with alternating spoonfuls of vanilla and chocolate batter, filling each three quarters full. Run the tip of a paring knife or wooden skewer thru batter in a figure eight motion to make swirls. Bake till top are golden and a cake tester inserted in centers comes out clean, abt 20 mins.

To finish, dust with confectioners' sugar before serving.

very laid back kan..we live around the beach suburb..loving the beach atmosphere here..though i tak la suka sangat beach..but i love the beach atmosphere kat glenelg and its surrounding area. But tak mampu nak beli rumah with big backyard kat this area, tu yg sanggup duduk unit asal dapat dekat ngan beach..haha.

It's a different kind of atmosphere kat sini..something that u can't get in sydney or melbourne..dah datang baru tau kan...

Is it Stamford Grand Hotel? kat situ banyak cafe or the cafe inside the hotel which is betul2 mengadap the beach...on a sunny day the view from the cafe very2 stunning....i usually just walk from rumah to Stamford Grand..very very nice view all the way from Broadway to Stamford Grand..Broadway ni not so famous tapi dekat je ngan Glenelg, basically it's in Glenelg South..ada small small shop macam kat Handorf tapi just 2 or 3 je..tapi i suka sangat jalan2 kat situ sampai ke beach terus until i reach Stamford Grand then patah balik.
