Egg Tart



Oh wow... finally i am able to sit down and take a deep breath... had a very long day today... busy busy... last night we went to JB to do our usual monthly groceries shopping and this morning Lyn and her kiddoes came by... love it when Sonia gets to play with Danish and Dafinah... shes at that age where she enjoys company... loves to interact with others... she talks so so much (in her own language of cos!) with them hehehheee



She laughs whenever Danish make a fool of himself hehhe... u shud see the way she laughs...its hillarious! I break my fast at home and we later went to Adam Rd for dinner... was a good day today but am keput right now...



So ok.. enough abt that... today i bake Baulu for the kids and Egg tart for us mothers... I've always used Aunty Yochana egg tart recipe but today i thought i gv this recipe a try... taste wise... we all love it.. hb said he prefers this one better... i find the dough rather easy to handle... no need to chill ur dough... no need to half bake ur tart bef pouring egg mixture... the filling to me is a little sweet tho... other than that... everything else is perfect... recipe fm Linda of MR

Ingredients
2 cups flour
1/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter (cut into 8 square)
2 eggs

Filling :
1 cup evaporated milk
4 eggs
1 cup sugar (will use 3/4 cup next time)
1 cup water
1 tbsp custard powder
½ tsp vanilla essence

Method
Crust :
Mix flour, sugar, baking powder and salt in dough mixer/food processor/rub in method
Add butter and rub it/ mix it to become breadcrumbs
Add egg one at a time and mix it till it become dough

Filling:
Whisk egg and sugar (i used hand whisk)
Add all other ingredients and whisk till well blended
Press dough into muffin tin or individual mould. Use a fork to prick holes at the base of the dough. Set aside.
Fill each dough in the muffin tin with 3/4 full of egg mixture.
Bake on a preheated oven of 200C for 20mins or till egg set. Let cool on the rack for about 10 minutes before turning out.



Use a ready made puff pastry and wallaaaaa u get a portuguese egg tart hehehee... just make sure u cut 6pcs of pastry or more 25g each ok... press pastry into a slightly greased muffin tray, prick holes and pour egg mixture.
