Blueberry Cream Muffin




I am kaputt... its been a very long day and Sonia was awake almost all day.. well she only nap for 45mins... did gardening with her in the morning and the end product? tidy garden = kaputt Rima! hb if ur reading this... PLS DO THE GARDEN ON WKENDS AND STOP PLAYING XBOX/WATCHING TELLY!! grrr men!

Last night i couldnt sleep well cos of bad cramp.. i hate this time of the month.. i got scared thinking abt it... so so painful.. like in labour pain! thank goodness after taking 3 pills.. it went away... and that was already 3am..

Sis Wati came by and suspected that i had a long day since i didnt update my blog lol... tsk tsk... go n do ur work and stop surfing the net! hahhaa



Finally after looking around for the right recipe for my 2 1/2 tub of sour cream that expire today... i decided to bake blueberry cream muffin... err muffin? what muffin? dont see any? hehehe..when i started baking... it was already 10pm and if i were to do it in muffin cups... it will definately take me more than 2hrs baking it since it yield 32 huge muffins sooooo what did Rima do... she dumped it in bundt pan and baked it.. voila.. quick and easy! recipe fm allrecipes

Ingredients
4 eggs
2 cups white sugar (i used 1 1/4 c of brown sugar, 1 1/4 c of white sugar)
1 cup vegetable oil (i used melted butter)
1 teaspoon vanilla extract (i used 1 tbsp)
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups sour cream
2 cups blueberries (I used fresh.. u can of cos use frozen ones)
1 1/2 tsp of cinnamon powder ( i add)



Method
Preheat oven to 400 degrees F (200 degrees C). Grease 24 (32) muffin cups or line with paper muffin liners.
In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.
Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
Bake in preheated oven for 20 minutes. (bundt pan.. 65mins)
OR
U can add sour cream to ur egg mixture bef adding flour.. easier as i hv difficulty mixing it.. lumpy.. remember not to over mix ur batter ok!


Note: i did a few changes after reading reviews fm others.. u can always follow the original recipe to the T... this muffin is definately moist.. due to sour cream.. thank goodness i follow what others did... add more sugar cos it definately taste better.. also next time i probably wud add lemon zest instead of cinnamon powder..

Hey Rima.. what can we use ya' to replace sourcream? It's hard to get em' at times..

u can use yogurt if its difficult to find sourcream..
