Buttercake




My all time fav besides pound cake... the rich aroma... the rich taste of butter is simply iressitable... u can bake it as it is but of cos u can always gv it a little twist like adding orange zest or even marbled it... i did a zebra cake pattern to my buttercake... its easy and fun... recipe fm aunty yochana blog..


Ingredients
125g butter
125g cake margarine
100g sugar
1tsp vannilla essence
90g egg yolk
1tbsp evaporated milk
200g cake flour
5g baking powder
a pinch of salt
160g egg white
100g sugar
(For more buttery taste use 250g butter which i did of cos!)

Method
Beat butter, sugar, salt and vanilla essence until light and creamy
Add in the egg yolk one at a time and beat until creamy. Add in evaporated milk
Fold in seived cake flour and baking powder
Whisk egg white and sugar to a soft peak and fold gently into the creamed butter mixture
Pour into a 20cm round tin and bake it at 175C for abt 45mins or until cooked.

For marble effect
1tbsp cocoa powder to 3tbs of batter (use dark cocoa powder for better result)
Divide the mixture into 2 equal portions. Keep one portion plain. Add cocoa powder into another and mix well.

Zebra pattern
The most important part is assembling the cake batter in a baking pan. This is what you do. Scoop 3 heaped tablespoons of plain batter (you can also use a ladle that would hold 3 tablespoons) into the middle of the baking pan. Then scoop 3 tablespoons of cocoa batter and pour it in the center on top of the plain batter. IMPORTANT! Do not stop and wait until the previous batter spreads - KEEP GOING! Do not spread the batter or tilt the pan to distribute the mixture. It will spread by itself and fill the pan gradually. Continue alternating the batters until you finish them.
