Been awhile since I last prepared a non bake kinda cheesecake... I call this type of cheesecake... easy peasy cheesecake lol... so easy and non fussy... so delicious and not too heavy on ur tummy... most important thing is to let it set overnight or for at least 5hrs in ur fridge...







Now this recipe uses Baileys coffee liquor which I dont use... hb said.. once upon a time bef he was known as Shahmeer... he used to drink Irish coffee liquor which is Baileys.. "its creamy, tastes of coffee and smoooth"... when he got home fm work, I told him that i had prepared Baileys cheesecake.. guess what he said with that cheeky smile??  woooahhhh really ah?? muahahah 







Well if u wanna use it.. by all means... some ppl use rum essence.. some ppl use kahlua or any other type of liquor.. sooo really... its all up to ur preference... original recipe is fm Stefanie of KC..


Ingredients
BASE
1 small pack Malteser candies - crushed
About 12 digestive biscuits - crushed
50g butter - melted (i used 80g)

FILLING
250g Philadelphia cream cheese - softened
1 tsp vanilla essence
25ml to 30ml Baileys (i ommited)
200ml dairy whipping cream
1/2 cup caster sugar
1 tbsp lemon juice
1/4 cup boiling water
1 1/2 tbsp gelatine powder

Swirl
1 tbsp butter
50g dark chocolate (I used valrhona 70%)





Method
For base.... mix crushed Maltesers and digestive biscuit with melted butter together. Press and smooth evenly in an 8-inch springform pan. Place in a freezer while you get on with the filling... abt half an hour or so...

In boiling water,sprinkle gelatine evenly,leave to "bloom" for 2 minutes. Stir to dissolve. (i mix gelatine and boiling water, stir and micro it for 20 sec on high)

In microwave.. melt butter and chocolate in 30 sec bursts...stir to combine... (i micro it for a minute on high... every 30 sec i wud take it out and stir)


In your mixer or using a whisk ... whip cream till stiff peaks form - chill.
In a mixer (no need to wash after whipping cream) or food processor,cream the cheese and sugar on high speed till smooth,beat in lemon juice and vanilla.
Stir gelatine mixture,(while resting,some gelatine will settle to the bottom...) and beat in to combine.
Fold in whipped cream...remove tin from freezer.

Pour about 1/4 of batter into chocolate mixture,stir to mix....
Mix in Baileys with white batter.
Pour about half of white batter into tin,add half of chocolate batter,swirl to combine.
Add other half of white batter,top with spoonfuls of remaining chocolate batter,swirling to marble patterns.
Chill overnight.
To serve,run a knife along the sides of the cake,unmould,and slice.








Oh bef i go... let me intro u to a newbie in my pantry... her name is Ms Sunbeam.. bought and exported out of Aussie Land lol... well honestly?? I bought it when we were in Aust but didnt get to use it till a few weeks ago... love it love it love it!!!

Hmmm i think this photo was taken at the airport... ohhh yesssss.. now i remember.. that was the same day my super duper hb got me my super duper DSLR camera heheh.. we had dinner at Swensons and Sonia kept on running out of Swensons to play with the public phone ... judging by the the amt of hair she has back then.. my girl has a lot more hair now and papa is loosing far too much hair... stress ah?? muauahahah


Looking at the photo just reminds you of how fast kids grow up. Every day she does things where we get mad at her, every day she does things where we laugh at her and every day she does things where we think we have a super smart little girl. We're blessed to have her (took us a long time to have a baby) so every moment is precious and every moment is priceless. So maybe to caption this photo I would just say "Hello Sonia, welcome to our world...Mama and Papa are always a phonecall away when you grow older!"

Hiya peeps! dont u just feel that sometimes ur body or ur mind aint working how it is supposed to work?? its like one moment ur all hippy hippy hippuppa.. another moment ur feeling all crappy without any reason.. its like the weather just sucked u in?? its like ur nose gets stuffy... ur brain aint working... ur feeling like s***... get it?? 



I am just glad that this morning I woke up with a clear head.. probably cos it finally rained?? err what has rain got to do with mood swing?? lol.. the bottom line is, I am feeling a lot better than yesterday and i'm trying to take it easy... 



Take it easy u said Rima?? muuahahah... ok ok not really... I decided to finally make use of the egg yolks in my fridge and bake the ultimate butter cake.. hmmm honestly i dont even know if i shud post the recipe cos it wasnt tasty at all.. infact it was tasteless.. opppsss sorry.. but thats the truth.. :o( 







So enough abt the ultimate butter cake .. hb had requested  Burger for dinner and since i dont even hv any burger buns in my pantry, I decided to wake my BM fm its deep deep sleep hehehe.. Dough came out pretty sticky but manageable ... surprisingly after baking em... the bun turned out super soft... sooo thats good right?? one turned out blahhhh.. another one turned out good... :o) 







Ingredients
1 Cup warm water
1 Tsp sugar
1 Tbsp dry yeast
3/4 Cup warm milk
4 Tbsp sugar
1/4 Cup shortening - Melted
1 1/2 Tsp salt
4 Cups Bread Flour, Reserving ½ Cup
1 egg white
1 Tsp water
1 Tbsp sesame seeds


Method
Proof the yeast in 1 cup warm water with 1 teaspoon sugar; let sit for 10 minutes until foamy.
Using a mixer, and a large bowl add in 3-1/2 cups flour, 4 tablespoons sugar, melted Crisco, warm milk and salt. Add in the proofed yeast; mix to create a soft semi-sticky dough, adding in reserved flour as needed (do not add in too much as it will create a heavy bun, dough should be semi-sticky.
Knead dough for about 10 minutes. Remove dough, and let rest on the counter, cover with a clean dish towel for 10 minutes (this is an important step!).
Knead the dough gently for 30 seconds with hands. Place dough in a large well-greased,oiled bowl.
Cover, and let rise in a warm spot for 1 to 1½ hours, or until double in size. Punch down dough. Shape into large balls, and place on a large greased cookie sheet (you should get 12 balls on the sheet).
Cover with a light clean towel, and let rise in a warm place for 30-40 minutes, or until almost doubled .
Preheat the oven at 375°F.
In a small bowl, mix together 1 egg white with 1 tsp water; whisk, and mix well. Carefully brush the tops and sides of the buns with the egg mixture. Sprinkle with sesame seeds.
Bake for about 20 minutes, or until golden brown.







Shud I just post the Ultimate Butter Cake recipe?? hmmmmmmm ok ok i will just to show u girls how much butter it uses!!!! &*(*&^ hahahha


Ingredients
375 g Butter (i used unsalted and add 1/8 tsp salt)
10 Egg Yolks
1 Cup Sugar
1 1/2 Cups all purpose flour 
1/2 tsp baking powder
1 Tsp Vanilla Essence  

Method
1. Melt the butter.
2. Mix egg yolks and sugar until creamy.
3. Add in the cooled melted butter.
4. Sift the flour and fold into mixture.
5. Add in Vanilla essence.
6. Bake at 150˚C for 45 minutes or when done.

Saturday, March 6 2010 was not the usual bbq party that we usually hold on yearly basis.. bef sonia was born.. our bbq party was held eve of Christmas .. now that we hv her in our life.. it makes sense to move it to March..

Anyway I hv decided that i shud just post some of the bbq/bday party photos at one go tonight so sit back and enjoy!

Scavenger Hunt... When hubby and his bro organize games, there is always a scavenger hunt. This time it took a good 40mins to complete and even had a personalized crossword puzzle... (the worst part.. they kept on asking Hairi and me for the answer lol.. sorry guys.. i was not even involved in the planning of any game)






Hubby and Bro tallying the points and the objects of the scavenger hunt... LOTS of exercise for everybody.. muahahah

As the night progressed, the bro gang grew larger and larger... At this point they were discussing the possibility of having a Ramly Burger / Satay Goreng stall at the Ramadhan fair in Geylang this year!hmmmm


The eventual winner of the Scavenger Hunt - my 2nd sista. (tak kelong...tak
kelong eh.. heheh)

This was the final game of the night: Bingo. (In air condintioned comfort) - prior to this we also had games for the kids: Pop the baloon, musical chairs. For the adults, as a tradition, we always have musical chairs too... and the NEW winner for 2010 is: 3rd Sister! (tak kelong....tak kelong okkkk...)





Almost midnight when we started to let her open up her presents.. ty everyone for making everything effortless.. good company made it worthwhile..

So ok lets get this over and done bef Sonia starts to cry and wants to be carried to our room!... i will do this in 3 parts.. we shall start with food photos since theres not many lol.. what to do.. i was busy entertaining!

This year I decided to bake for her a Mickey Mouse cake since shes crazy over Kiki (as what she calls him!) hb had warned me to bake something simple since i would be busy preparing other types of food/ deserts.. "no fondant Rima"..."no 3 tier cake"... "we are feeding little kids!" hmmmm well ok dear hb.. i will bake a simple cake with a little bit of a surprise... "evil grin"..







Everyone who saw the cake was impressed by how tall n big.. err not forgetting how heavy it was! .. the icing image of Mickey Mouse was a superb idea.. it makes ur cake look alive heheh But most of all.. nothing can compare to the reaction I got when the cake was cut... it was an outburst of surprise all around eventho there were more adults than kids lol.. its like in a split second the adults became kids once again?? almost like a joy at seeing something colorful. At that moment i knew why I love to bake so much. This is what it’s all abt.. to see people happy is to make me happy... hmmm does it make sense?? muahahha







So lets not talk more... here are the cake photos and some of the deserts that i had prepared a day bef the bbq party.. oh and of cos.. we had fried rice and fried bee hoon as main meal.. not forgetting the bbq essentials.. chicken, tiger prawns, otah and last but not least.. satay!

Recipe for Best Party Cake (oh how true!) by Dorie Greenspan

Ingredients
2 1/4 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups buttermilk
4 large egg whites
1 1/2 cup sugar
2 teaspoons grated lemon zest
1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 teaspoon pure lemon extract
Gel or powder food coloring (i used wilton and 1/4tsp each colour)





Method
Preheat the oven to 375 degrees F and put a rack in the middle or upper third of the oven. Butter two pans and line with buttered parchment paper.

Sift together the flour, baking powder, and salt. In another bowl, whisk together the egg whites and buttermilk.

Cream the butter, zest, and sugar in a mixer on medium speed for a full 3 minutes until very light and fluffy. Beat in the lemon extract, then add 1/3 of the flour mixture, still on medium speed.

Beat in half of the egg-buttermilk mixture, then half of the remaining flour mixture, then the last of the egg-buttermilk mixture, and finally the last of the flour, beating until the batter is smooth. Beat the entire batter on medium high for two minutes until completely smooth and mixed.

Divide the batter in two (it’s about 6 cups total batter.) Dye each batter a different color of the rainbow and scrape into the two pans. Bake 20 minutes, rotating halfway through, or until a thin knife inserted in the middle comes out clean. Cool in the pans five minutes, then turn out onto a cooling rack. To ensure moistness, once the cakes are cooled, wrap immediately and chill.


Note:
I baked 3x this recipe to get 6 layers of colours using 25x33x7.5cm pan...you can use buttercream. fresh cream or cheese buttercream as fillings.. or you can use any kinda jam for the layers.. i used the best raspberry preserved that i cud get my hands in the supermarket.. heat jam for easy spreading... next time i will use lemon curd for layers... mmmmm

OMG!! Perfect perfect chocolate chip cookies recipe so far!! we are so so in love with the taste, texture, sweetness of these cookies.. bake it longer if u wanna crispy type.. bake it for 10mins if u prefer a little chewy type.. either one.. this recipe is definately a keeper..







Well ok what are u waiting for?? go and bake it right now babes and you know what.. its much more fun to bake cookies if u hv a monster aka hb in ur kitchen who likes to munch on the dough and kept on saying it tastes like Ben and Jerry ice cream.. lol weirdo!! muuuahahha



Ingredients
250g salted butter,softened (i used SCS)
200g light brown sugar
1/4 tsp salt (i didnt add)
1/2 tsp coffee oil (obtained from Sun Lik, this is the one that gives the cookie its distinctive fragrance and makes prople wonder,hmm what is that? but they usually cannot tell what it is)
1 egg
1 tsp vanilla extract
1/4 cup oats,processed to bits in a chopper (i used nestum)
1/4 cup ground almonds
1/2 cup of your favourite nuts,chopped finely (optional)(i used whole hazelnut.. toasted)
1 pack of Nestle Tollhouse semi-sweet chocolate chips OR chocolate chunks (don't use cheap chocolate chips,the flavour is compromised)
300g self-raising flour (i used plain flour with 1/2tsp of baking powder)







Method
This is the most important step,at least 2 hours before,or the night before,beat the egg with the vanilla and the coffee oil to infuse or you can do this the night before,refrigerate it then bring it to room temperature before baking.

Preheat oven to 160C.

To the softened butter,beat in the sugar and the salt to combine. Beat in the egg and stir in the processed oats,ground almonds,optional chopped nuts and the chocolate chunks. Sift the flour and fold it in,this dough will not be too stiff but not too wet either.

For small cookies,place half-tsp of the dough,spaced slightly apart on the cookie sheet and bake for 9 to 10 minutes.

For large cookies, place rounded tbsp of the dough spaced apart on the cookie sheet and bake for 20 to 22 minutes.

Cool completely and let it sit overnight in an airtight container,this is for the flavour and fragrance to develop further.
Eat one freshly made and one the day after,there is a difference!

Phewwww what a weekend we had... pretty much most of our time was spent outside.. we went to the Barista championship to witness Singapore's top baristas... very entertaining with a free flow of whatever coffee u want! niceeeeee!!

We also met up with "cough cough" the "bro association" for dinner and coffee and spent the night till the wee hours... Sonia had fun cos for a change mama and papa allowed her to stay up till late lol.. we also had to go to several places in search of a few party things for this weekend.. I can already sense how busy its gonna get this week... err well it started today actually...







I shud hv called this cake Alessandro cheese cake cos i baked it especially for him .. ahem ahem... who is Alessandro.. u may ask... well he is my Italian stallion... muuuahahahhaha... ok ok a little crush wont harm anybody right especially when hb knows abt it.. no?? whatever lol... was super excited when hb told me that hes coming by for a visit... well he flew in fm Italy for a meeting with hb and had a few hrs on hand bef his next flight.. so hb thought its a good idea to take him home so that his wife can feast her eyes on her sexy Italian stallion ahahaha.. ok ok behave Rima!!!







Anyway this is what I baked today, Lemon Baked Cheesecake... had wanted to bake my fav cheesecake but it would need at least 6hrs of chilling bef i cud pour in chocolate mousse and ganache... oh well... this cheesecake is equally delicious too .... so said Alessandro .. "blush"... recipe is fm Baking Code by Alex Goh.


Ingredients
Chocolate Sponge Cake
(A)
2 egg yolk
8g sugar
1/4 tsp vanilla essence

(B)
2 egg white
50g sugar

(C)
42g plain flour
8g cocoa powder

(D)
25g corn oil

Method
Whip ingredients A till light and fluffy
Whip egg white till soft peak and add sugar in 3 batches
Mix the egg white mixture with ingredients a till well blended
Fold in ingredients D and mix till well combined. Add in corn oil and mix till well incorporated
Pour into a greased 7" round mould
Bake at 180C for 20mins







Ingredients
(A)
250g cream cheese (room temp)
20g sugar
1 orange zest (i used lemon zest)
3 egg yolk
30g orange juice (i used lemon juice)
80g sour cream (i used yogurt)
25g plain flour

(B)
3 egg white
55g sugar

Method
Grease and line the sides and bottom of a 7" round mould. Base a greaseproof paper. Wrap the outside of the mould with aluminium foil.
Cream ingredients A till light. Add in egg yolk one at a time and cream it till smooth.
Add in orange juice and sour cream and cream it till well blended. Add in plain flour and mix till well combined.
Whip ingredients B till soft peak stage
Mix the whipped egg white with the above cheese mixture till well incorporated.
Place sponge cake at the bottom of the mould. Pour the cheese mixture over the cake.
Bake in water bath at 160C for an hour (i baked mine at 150C for 50 mins)
