Ahhhhh what a wonderful day.... I woke up feeling fresh eventho its the time of the month again.. hmm no wonder yesterday i was having horrendous mood swings! urgghh and guess what.. best of all... i can upload my bakings pics and get to share new recipes... hmmm fm the look of my cake.. what do u think it looks like?? hehehe



Recipe is fm Sedap magazine edisi 61/XII/2011 which i had bought recently in Jkt and if u were to ask me how it tastes like?? err well i hv only one sentence to say.. that all egg white steamed cakes taste the same... not much to rave abt.. the taste actually comes fm all the paste that u add into ur batter... however it is much healthier as it only uses egg whites... minimal sugar and also it uses oil and not butter... am not a big fan of oil based cakes but my aunt is.. so this cake was made especially for her... hope u like it cik.. err did u even get the box of cake that i left infront of ur doorstep cos i didnt even get any call fm u.. gulp :o~



Ingredients
300g egg white
1/2 tsp salt
1 tsp emulsifier
120g sugar
150g low protein flour - cake flour
20g milk powder
50ml thick coconut milk
30ml oil
1/2 tsp rhum - i used vanilla
1/2 tsp black forest paste or chocolate paste
1/2 tsp mocca paste

Method
Prepare steamer.. grease 8" round pan (I used oval pan)
Whisk egg white, salt and emulsifier
Using low speed.. add in sifted flour and milk powder
Fold in coconut milk and oil thoroughly
Divide batter into 3 equal parts.. add BF into one and mocca into another.. leave the 3rd one plain
Pour in a laddle of mocca.. followed by chocolate and lastly plain.. repeat the same action till finished
Steam ur cake for abt 25 mins on medium/high fire..




I will update another recipe which i managed to bake yesterday in a little while.. its one of Ny Liem's recipe.. so stay tuned! oh oh and also be quick to push ur supermarket trolley girls cos my BF paste is selling fast and my spekkeok are almost gone and i think the big pack condensed milk is gone when i woke up this morning hehe (stocking up for raya eh? :)

There i said it.. am sorry peeps.. i hv to get it off my chest.. anyway.. my baking mac sheets have finally arrived and guess what i found out?? instead of sending me 30pcs .. they sent me 54pcs of mastrad sheets.. not just that.. they also sent me some piping bags and mac sheets for big macarons...so I have updated my store with the latest stock...and for those who have been so patient, your goods will go out tomorrow!

In addition, I have also now stocked the Chocolate Black Forest Paste and some other items under "Ingredients".

Craving for a savoury dish?? this is it.. u dont need to look for anything else.. bake this and u will be satisfied hehehe



I dont hv much to say today except i hv one piece of good news.. my macs sheets are on the way to Sg fm France by DHL.. shud be here latest by Thursday... phewwww.. ty all for being so patient.. will send it out as soon as i receive it..




Ingredients
6 eggs
6 egg yolks
80-100g sugar - i used 80g
1 tbsp cake emulsifier (optional)
1 tbsp water
100g all purpose flour
20g milk powder
¼ tsp baking powder
100g margarine+30g unsalted butter - melted and cooled (I used 130g unsalted butter and added 1/2 tsp of salt to my flour)

Topping
Spring onion - slice thinly
Red chillies - discard the seeds and cube
Sesame seeds

Filling
50g mayonnaise - i used 100g
1 tbsp condense milk - i used 2 tbsp
Abon sapi or ayam - beef or chicken floss (if u cant find it near ur place.. i think u can also use serunding daging as a sub.. hmmm)



Method
1. Sift flour, milk powder and baking powder - set aside
2. Preheat oven 200’C. Grease and lay baking sheet on two 28x28x3 cm baking pan. (I used 30x30cm and also 26x26cm pan)
3. Whisk eggs, sugar, cake emulsifier and water till thick and fluffy.
4. Lower speed and add in sifted flour.
5. Fold in cool melted butter using spatula.
6. Pour batter into two pans.. sprinkle spring onions, red chillies and also sesame seeds.
7. Bake it for abt 15 mins or till the top golden in colour.. DO NOT overbake or u will hv difficulty rolling ur cake.
8. Once bake.. turn ur cake on baking sheet.. peel off the back paper and let it cool.
9. Spread mayonnaise and condense milk mixture.. sprinkle chicken/beef floss all over and start to roll.. roll.. rollllll hehehe
10. Let it sit for a few mins in ur fridge bef slicing em..



Am not too sure if i will be updating tmrw as hb will be flying off to KL for a day.. which means i will hv our car for the day.. am thinking of taking sonia to the Zoo.. see how.. till then.. bake this ok cos its delicious.. its worth it .. even my fussy hb loves it!

Remember my urge to bake something chocolaty last night? well this is it.. i took out my newly bought food processor.. whisked my eggs and sugar and added it to my melted chocolate/butter mixture.. stirred in the dry ingredients.. baked it .. cooled it and went straight up to my bedroom.. didnt manage to fall sleep right away for the pain came back to me as soon as i was done cleaning up my kitchen.. i finally fell asleep around 3am.. hmmm wonder why is it that all of a sudden the pain seems to be so so much bearable when i am baking.. "shrugs"



Ty guys for all the well wishes.. didnt know there were lots out there that are just like me.. dentist haters hahaha.. anyway this morning i woke up feeling a lot better than yesterday..alhamdullilah.. we did our sunday marketing and went to my parents place right after that.. stayed there till after Isyak as both my sisters were there too.. always nice to see everyone and guess what we talked all day long?? hehehe our next holiday destination!



So ok lets get on with the recipe that i saw fm Bunda Nadhifa blog.. i have actually been craving for brownies since i was in jakarta.. i cud hv just bought it off fm the hotel cafe but unfortunately most of their chocolate cakes consist of alcohol .. even their chocolate and coffee macs consist of alcohol.. so what did i buy to settle my chocolate craving?? chocolate swiss roll.. sigh.. they were just so so.. even their macs were so so (we bought a box that consist of tutty fruity flavours)




Ingredients
8 tablespoons (1 stick) unsalted butter, cut into pieces, plus more for pan - 120g
1 cup all-purpose flour (spooned and leveled) - 130g
1/4 cup unsweetened cocoa powder - i used valrhona
1/2 tsp baking powder
1/2 tsp salt
8 ounces semisweet or bittersweet chocolate, chopped - 225g - i used 53% and 70% cocao berry
1 1/4 cups sugar - 280g
3 large eggs



Method
Preheat oven to 180C. Brush a 20x20cm baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk flour, cocoa, baking powder, and salt; set aside.

Place butter and chocolate in a large heatproof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add sugar; mix to combine. Add eggs, and mix to combine. Add flour mixture; mix just until moistened (do not overmix). Transfer batter to prepared pan; smooth top.

Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.



I really like the rich chocolaty taste of these brownies.. it fudgy and not dry at all and the best part.. everyone loved it! Just dont forget: Brownies are all about Chocolate... so use good chocolate!

Today was one of the worst days in the last months.. err no not really.. in the last years! i got the mother of all pains of my life.. the pain was so so bad that it was much more worse than the day i accidentally cut my shin and had to undergo 8 stitches..

If u hv been with me for the longest time u will know my relationship with any dentist.. i hate going to the dentist unless i am forced to by Mr u know who! last week my molar tooth filling cracked and i shud hv gone to see my dentist but bec i wasnt in any pain i kept it fm hb.. this afternoon while having lunch, something must have entered the hole and caused it to "hit the nerve". I was in such excruciating pain that even after taking two types of pain killers it didnt subside and I was lying on the couch not being able to move... all i cud do is to keep on holding on to my head and cry and cry and cry..

Hb quickly took me to our dentist... we were lucky that hes able to see me right away.. he took a look at it and straight away told me that i needed a root canal treatment.. i was like.. oh noooo.. not only its gonna be costly.. its one of the procedures that i hv been trying to avoid! anyway long story short.. after 4hrs of treatment and close to $2k poorer..the doctor managed to find and drill out 4 nerves under my molar (and he was later very proud of his work haha)... i went back home feeling slightly better.. the pain is still there.. lingering.. everytime i take the anitibiotic and painkiller .. the pain will be gone but will come again after half an hr .. the pain is no longer an excruciating one.. its bearable that right now i am having the urge to bake something.. something chocolaty.. "faint"

...and for those that have been waiting; I did buy some stuff in Indo for my store - coming up!

Dear Aunties and Uncles

Papa made a mistake by booking our flight back to Singapore a month fm now.. u can imagine how papa was last night.. panic attack! surprisingly Mama was pretty calm abt the whole thing.. she wasnt even kicking up a fuss hmmmm.. I wasnt aware abt what happened last night till this morning when I saw papa on his lappy searching for any available flight back home... of cos he couldnt find anything as most of the flights are fully booked for today due to the school holidays in Jakarta... in the end he managed to find seats on another airline to get us home earliest by tomorrow evening which means paying for another set of air tickets for all of us!

Moral of the story.. we shud always check our air tickets and not take it for granted eventho we travel far too often... Papa always does online check in the night bef departure.. which is a plus point cos that way if we make a mistake.. like right now.. we still hv the chance to book for another flight.. eventho it means paying more than the price of flying to Jakarta...



Eventho it means paying for another night in this wonderful hotel...


Eventho it means i get the chance to swim one more time in this pool... eventho it means mama might get the chance to go to Titan once again and to go to Manga Dua tmrw morning...



So in the end everything worked out.. most importantly.. we get to fly back home tmrw.. Poor papa... hes in a meeting right now.. i am by the pool once again.. hopefully he will be done soon so that he can take me to play with "guinea pig" in Grand Indonesia later tonight... :o)

Peak Agenda: I am constantly running out of time lately... my time management.. sucks lol.. As u guys already know.. we are in Jakarta right now.. weather is better than in Malacca to be honest tho it has not been raining here for the past two weeks..

I hv been out and abt with my little Sonia.. we got Pak Sunarto (Janssen driver) to drive us to where ever we wanted to go to yesterday and i took the opportunity to go to Titan.. of cos! it was super crowded when i got there.. i managed to get what i wanted.. sonia was behaving well.. playing with all the cookie cutters and baking pans lol.. there was so so much stuff that i wud love to take home with me.. u shud see their "kukusan"... huge! haha.. I then pushed two trolleys to the cashier.. paid for it and got them to seal everything in a big box.. I was done with my baking shopping within two hrs! we later had to go thru bad traffic along Jalan Fatmawati to get to Grand Indonesia where we stayed for almost 4hrs.. by the time Pak Sunarto drove us back to the hotel.. it was almost magrib .. same time hb got back fm his meetings... so my tai tai status ended the moment i stepped out of Janssen's Volvo car muakahkahkah

Today i decided to just stay indoors.. thought its was a good idea to just chill and not go anywhere in the afternoon since i already got what i needed here.. if time permits i wud love to go to Mangga Dua tmrw morning but with an afternoon flight to catch.. i doubt i will be able to do so.. haishhh ... probably I will take a cab to their latest hypermarket later.. Lotte Mart to look for some baking and pudding books.. see how.. yg pasti.. i will force hb to take me to hv dinner at our fav makan place.. Gurame here i come!

Jonker Street... eventho the weather was super hot.. that didnt stop us fm checking out this place.. an old apek selling gula ketuk.. sonia is lucky to hv been able to see such an old practice of how old ppl sell this candy...


Ondeh Ondeh fresh.. yep yep.. hands on wokey.. u can either roll and boil em urself or u can just buy it off this glamour looking makcik that sells ondeh ondeh.. hahaha


Maternity home?? err ... the whole street later turned into a nite market...

Muahahhahha my mom will kill me if she knew that i post these pics of us in the jacuzzi... i had wanted to go in myself bef all the others decided to join me... hence the red, black, pink, brown and almost faded hanging there muahahahaha.. we had a super uber time in there.. hanging out.. laughing and talk just abt anything - that evening all of us felt sick cos we are afterall talking abt a fancy tub that gives u some kinda message hahaha - padan muka! haha


Night out... not to party lol.. hb decided to drive us somewhere for dinner...

Mat Noor giving us suggestions on where to go for seafood.. Has to be in Anjung Batu of cos! less commecial... food is superb!


Breakfast time ... there was a dragon boat race... so while having brekkie we got to watch it too.. niceeeee

Ahuh.. work it out girls... hehe... it was almost 6pm when we checked ourself out of Casa Del Rio..

A quick one.. We got home just bef midnight.. had a super wonderful time with the entire family.. it is indeed money well spent.. we stayed.. we chilled.. we hung out.. we check out and stayed at the newly Casa Del Rio .. the weather was too hot for our liking tho.. we were sweating like oink oink lol.. we felt like running back to the hotel each time we were at jonker street! thank goodness it was only a 3 mins walk to jonker street or my skin will get darker then it is lol.. one thing for sure.. my little Sonia had great fun.. she even got a tanned hehe

We booked Cheng Ho Suite and we got Malaccan Suite.. ty Mat Noh for the upgrade.. of cos with 16 of us around.. we had to book an inter connecting room.. hugeee living and dinning area..

The three bedrooms.. master bedroom belongs to us of cos hehe.. spacious bedrooms.. one even had balcony...

Malacca Suite has an attachment jacuzzi area.. heheh each time i see this pic i remember the red, the black, the pink, the brown and also the err almost faded err err muahahah



So ok bef i go i wanna say thanks to Mimi for ordering macs and also haw flakes layer cake.. nice to see u and good luck on ur upcoming delivery.. may u hv a smooth one yah..



And also i ended up baking macs for two of the concorde staff and oh the cake that u see up there? i had actually baked this zebra cake to munch in the car.. this zebra cake has a chiffon like texture..

Ingredients
75g flour
15g cornflour
1 tsp Baking Powder
2 tbsp powdered milk
75g melted margarine - i used butter
6 egg yolks
6 egg whites
80g sugar
40g sugar
1 tsp SP - emulsifier
1 / 4 tsp salt
1 tbsp cocoa powder
1 sdt vanilla essence
1 tsp brown paste - blackforest paste

Method
- Preheat oven 175C for 15mins
- Prepare and greased 20 cm baking pan
- Sift flour, BP, milk powder and cornflour
- Beat egg yolks with 40 g sugar and Sp until thick and white, set aside
- Beat egg whites and salt until frothy and add sugar a little at a time until finish... beat until soft peaks
- Add egg yolk mixture into egg white mixture on low speed until well blended, add vanilla essence .. whipped again
- Add sifted flour mixture on low speed.
- Fold in melted butter with spatula ..
- Take 1 / 4 part of batter and mixed with cocoa powder and cocoa paste, stir until smooth
- Pour 1/4 cup of plain batter in the middle of ur pan.. followed by 1/8 cup of cocoa batter.Repeat the process until batter runs out
- Bake for 35-45 minutes
