Nice?? I must admit that this is one of the best recipe that i hv found online... ty Vin for sharing... she got it fm Sedap, Cantiknya Kue Kue Mungil Book... the texture is perfect, super moist, the sweetness is just right and it tasted just like the one i had in Jakarta the other day.. just one bite and ur in heaven hahahha







Honestly behind all the good ole thing i've said, theres a story.. I dont think i hv ever used so little flour and so many egg yolks baking a layer cake bef and thus felt that i shud take extra precaution by reading the ingredients/method over and over again... soooo thats what i did..







I decided to bake it yesterday of all the days.. fully aware of the time (midnight).. fully aware that its gonna take me at least 2hrs.. fully aware that i am actually tired but couldnt get myself to sleep...


Sooo after 20 egg yolks, 300g of butter and 2hrs in the kitchen.. I found out that i had actually been baking my layer cake using upper and lower heat instead of grill mode!! (i was on the phone with hb when i set the setting)... a pat on ur back... well done Rima!! duhhhh... i was very very frustrated... tired and cursing at my "gunduness" at the same time!






Ingredients
150g margarine (i didnt use)
150g salted butter (i used 300g golden churn butter)
200g icing sugar
25g condense milk
375g egg yolks (20 eggs)
35g all purpose flour (i used HK flour)
25g milk powder
5 drops of green colouring
1/4 tsp pandan paste
1/2 tbsp spekuk powder (mix spice)
50 gr fruit mix (i used prunes)





Method
1. In a bowl, cream butter till pale.. add in condense milk and continue to cream for abt 10mins.
2. In another bowl, whisk egg yolk and icing sugar till thick and fluffy. Add in sifted flour and milk powder and continue to whisk. Add in butter mixture and mix till well combined.
3. Take 300g of batter and add in pandan paste and green colouring.
4. Add spekuk powder to the rest of the batter
5. In a greased 20 x 20 x 4 cm... pour in 90g of spekuk batter and grill using upper heat for abt 7mins or till layer turn slightly brown... do the same for the second layer.
7. For the 3rd layer, pour in 150g of pandan batter and grill for 7mins... the layer shud be 2 layer of spekuk, a layer of pandan, 2 layer of spekuk, a layer of pandan, 3 layers of spekuk.




This morning despite all that.. the first thing i did was to slice it.. took a bite and OH WOW... i rest my case! Alhamdullilah Aminnnn ...





Note: If ur using 22 x 22 x 4cm .. use 100g of spekuk batter to 150g of pandan batter. Use a cake presser for each layer, i brush melted butter on each layer too, i used prunes cos everyone in this house lovessss prunes

Just a short one fm me today... i went to town last night to meet both my sisters for coffee... we do at times get to meet up with one another for a quick update and a little bit of gossip session ... its nice cos we dont really get to meet up without our better half plus both of them are working women... so whenever i can (especially when hb is outstation).. i will try to arrange something with both of them.. good to see both of u girls last night.. the way we laugh just abt everything is something that can never be replace... :o)))  







Anyway after i dropped them off.. i realised that i had misplaced my house keys... as far as i can remember, i had placed it in my handbag.. hmmm


It was late and my only concerned was how on earth are we gonna get into the house... thank goodness Sonia wasnt fussy at all eventho it was way past her bedtime.. i went to my neighbour's house and told them abt my plight.. they were very helpful and her hb had to climb into my house (thank god my kitchen balcony door wasnt locked) to open up my front door... so for now it looks like i will be stuck at home till.... blaaaahhhhh!!







Ok back to my daily bakes... I had baked these petite cakes for my sisters... its simple and u can get lots out of this recipe... let me warned u that this is not ur typical dense, buttery type of cake recipe since it uses oil... these cakes are light and airy... just like ur typical sponge cake... well except it has red bean paste which makes it a little different... definately not my hb's kinda cake... i know Hairi will love it tho!



Ingredients
7 eggs
250g sugar
2 tbsp honey
350g plain flour
50g corn flour
25g ovalette
2 tsp baking powder
90ml water
1 tsp vanilla essence
100ml oil (i used corn oil)
50g almond slice
enough chocolate rice
15 floral baking tins (i used friand and cupcake mould)
enough red bean paste (mine was store bought)

Method
1. Grease each baking cup with a little oil and put in a tsp of red bean paste.
2. Beat eggs, sugar and honey in a mixer for a few minutes or till fluffy.. Add in ovalette.
3. Sieve plain flour, corn flour and baking powder and add into egg mixture and whisk till fluffy.
4. Add water and vanilla essence. Mix well then remove from mixer.
5. Pour in oil and mix well with ur hand... (u can use rubber spatula to fold in oil)
6. Spoon batter into the prepared cups... 3/4 full
7. Sprinkle with almond slice or chocolate rice
8. Bake in a preheated oven of 175C for 25 mins (mine done within 15mins)

Sorry folks... been busy ... sickies in the family plus hb's supplier is in town with his family (They are fm Germany but now lives in Bkk).. so yesterday we were out the whole day.. had dinner and sent them back to their hotel.. (felt like a tour guide this week lol).. and the weather... arghhhhhh!!







Well, to be honest, I dont really like the weather now.. sometimes hot.. sometimes rain and other time.. well just HOT! Weather like this means... falling sick...







It started with Hairi.. he came home with a fever a few days ago and hb came down with a cold yesterday... the sneezing, the stuffy nose, the body aching and worse.. he refused to go and see a doc eventho he knew hes gonna go outstation.. sigh.. so so typical of him!.. its sucks cos it makes me worried abt his health especially when hes scheduled to fly to HCM today.. well u better take care of urself and get better soon... cos if not.. i will take u to the doc when u come home next thursday :ox







Anyway now that both sickies in my family are not at home.. i plan to do a little "dust free" cleaning tomorrow.. open up all windows... change quilt cover... washing... ironing etc etc... oh myyy ... oh myyy .. its gonna be a pretty long day tmrw... thank goodness i've baked two batches of macarons this morning.. munch to distress?? err thats not good lol or perhaps "A macarons a day keeps the doctor away"??... not??

Dont u just love it when ur super duper hb calls and tells u that hes 15mins away and that hes coming home with an Italian supplier cos we hv to take him out for dinner?? I mean its all good if ur not doing anything.. its all good if ur ready to go.. its all good if u smell like a sweet rosy posy lol ... definitely not good especially when u hv been busy baking trays and trays of tarts since morning! arghhh anyway .. We took him to an Indian restaurant.. taught him to eat fish head curry.. took him to Geylang and taught him to eat Durian.. did he like it?? ohhhhh yeeeeaahhhh and guess what he asked me?? "Rima u think this durian thing will still be fresh if i were to take it back to Italy?" ... errr say whatttt???? hahhaha and my answer.. "you will be lucky if u get thru immigration without being spotted/smelt" ... by the end of the day.. it was all good.. we had a few good laugh... it was nice to finally meet u Alberto! 


So ok enough rambling... this was what i hv been baking... i swear baking rose tart alone can be pretty boring and monotonous.. I am just glad that I hv done baking this tart.. hb u owe me one!.. Honestly, I hv been dragging abt baking em since last month.. now its packed nicely.. sent and whats left is a few pieces for me to enjoy tomorrow..

Back to basics...


I hv been thinking abt baking this cake for months now.. this cake brings back memories.. i remember mom used to bake Marmer cake alot... she used to bake it in a square pan and wud always use a condensed milk can or even the golden churn butter can to bake us a small cake... another thing that i can easily remember was the use of powder colouring and also vanilli powder (it came in a very small bottle) in her bake...  wonder why she didnt use vanilla essence back then.. perhaps it was way too expensive to use vanilla essence or extract.. or maybe all her recipes used vanilli powder???... "shrug"







Now i got this recipe while blog hopping and saw it uses vanilli powder and i had bought a small bottle of vanillin crystal powder while in jakarta.. thought i shud gv this recipe a try and will gv mom a loaf tomorrow and see what she says.. (oh i got two small loaf of marmer cake with this recipe) Love the simplistic taste of this cake.. love the moist texture.. love everything abt this cake... 



Back to basics... :o)))



Ingredients
6 egg yolks
5 egg whites
300g margarine (i used unsalted butter and add 1/4 tsp of salt)
250g sugar
200g all purpose flour
25g corn flour
25g cocoa powder
1/4 tsp vanilli powder







Method
1. Beat butter and sugar till light
2. Add in egg yolk one at a time and continue to beat till well combined. Add in vanilli powder.
3. Fold in sifted flour and cornflour.
4. In another bowl, whisk egg white till stiff peak and fold into butter mixture
5. Take a bowl of batter and add in sifted cocoa powder
6. In a greased 9 x 22cm of loaf pan pour in half of white batter.. top it up with chocolate batter and end with the rest of white batter. (u can also use a 10cup bundt pan)
7. Use a fork or a chopstick to make a few swirl
8. Bake in preheated oven of 175C for 50mins

My love for bread is unbelievable... its like i am a bread whore or something muahahahha... my dear hb.. bless him.. always reminds me to stop eating bread and move on to having a proper meal whenever we're in some restaurants... oh god.. how to?? I love hard bread... ya know.. hard rolls, french rolls, german bread, breakfast rolls whateverrr.. i love eating em just like that.. with butter and thats it.. not a big fan of jams tho.. I'm a plain jane woman.. simple and not fussy.. (hb u better nod ur head!)


Now eventho most of the bread recipes that i posted in my blog were sweet bread buns.. in reality most of the time i love to bake french rolls?? i dont really like red bean buns and if i hv the craving for sweet bun.. i much much prefer coconut buns or even sugar butter buns..







This is a simple milky bread recipe.. baked it for Hairi yesterday morning.. it produces a big loaf and if u dont wanna do a tri colour kinda bread.. u can always leave it plain.. u can shape it in any ways cos dough is super easy to handle.. enjoy!


Ingredients
1 egg, lightly beaten (i forgot to add.. oppsss!!)
220g fresh milk
180g whipping cream
9g salt
80g sugar
540g bread flour
60g cake flour
30g milk powder
10g instant yeast





Method
Add ingredients in BM according to the list
Select dough function and let the machine knead the dough
Once machine beeps, take the dough out onto a lightly floured table and punch it down
Dividd the dough into 3 equal portions (use a scale to weigh the dough so that you get three equal portions)
Knead in half a tsp of green tea powder...the 2nd portion add in one tsp of cocoa powder.. The 3rd portion I left it plain. It was not too difficult to knead in the powdered green tea/cocoa...just a few gentle kneading should get the powder fully integrated into the dough.
The three dough were then left to rise in separate bowls. After they doubled in size, I shaped them into rounds and leave it for about 10mins before they were shaped into long ropes.
Place it in a loaf pan and let it rest for another hour or double in size.
Brush the bread with milk or egg wash, throw in a handful of sesame seed on it and bake it in a preheated oven at 170C for 40 mins
Brush melted butter on it and ur good to go!

Cant wait for the week to end... too many things going on... issues and i am not liking it at all... felt like running away fm it but how lol :o((((((


Anyway I finally finished preparing the long winded cheesecake yesterday after we got home fm Sonia's doc appt. She had her Hepatitis B and H1N1 injection and will hv to go for another jab in a month time.. poor girl... good news is.. doc said shes one healthy girl.. :o)







Honestly i wud rate this cheesecake as not an easy peasy kinda cheesecake.. its time consuming.. it has a few steps (a put off.. i know) and uses a lot of ingredients.. nevertheless i  assure u that this is one super rich (fattening too hehhe) cheesecake that u wouldnt want to miss out.. 



Ingredients

Digestive biscuit base
160g digestive biscuit (finely crushed)
80g melted butter

Method
Mix all the ingredients until well blended. Press it onto bottom of 23cm loose bottom pan. Refrigerate for 15mins or until firm


Cheesecake
Ingredients (A)
500g cream cheese
140g sugar
20g corn flour (I accidently used hoen kwee flour!!)
Ingredients (B)
3 eggs
Ingredients (C)
50g orange juice
1 orange zest
Ingredients (D)
150g whipping cream (dairy whipping cream)
Ingredients (E)
250g chocolate glazing







Method
Press digestive biscuit base into bottom of 23cm round loose bottom mould. Cover the outside of the mould with aluminium foil
Cream ingredients A until light. Add in ingredients B, cream until smooth
Add ingredients C, cream until well combined
Add in ingredients D, cream until well incorporated
Pour cream cheese mixture onto the prepared biscuit base
Place it over double boiler, bake in water bath at 160C for 60-70mins
Refrigerate the cake for at least 4hrs







Chocolate Mousse
Ingredients (A)
60g milk
Ingredients (B)
20g sugar
1 egg yolk
Ingredients (C)
80g dark couverture (chopped)
Ingredients (D)
2tsp gelatine
30g water
Ingredients (E)
150g whipped topping







Method
Cooked ingredients A until boils. Add in ingredients B, mix until well blended. Continue to cook for 1 min. Add in ingredients C, mix well combined
Mix ingredients D until well blended and place it over double boiler, cook until gelatine melts or u can micro it for a few sec. Add it into the above mixture
Cool it over ice water to 30C. Whip ingredients E until the soft peak stage. Add it into the abv mixture.
Pour it over the baked cheesecake. Keep it in the fridge for 2hrs or until set
Pour the chocolate glazing over the chocolate mousse. Keep it refrigerated for 20 mins to let it set
Unmould and decorate side of the cake with cream shell. Place some white chocolate shaving on top if u like.







Chocolate Glazing
300g cooking chocolate (melted)
75g milk
15g whipping cream
10g butter

Method
Cook milk and whipping cream until boil. Add in the melted chocolate and mix until well blended. Add in butter, mix until well blended. Set aside to cool to pouring consistency, serve immediately!







My chocolate glazing didnt turn out the way i wanted it to be.. it should be smoother.. i think i must hv added the milk mixture bef my chocolate had fully cool down.. oh well...

I think for the next couple of days.. i will hv to settle with a short entry.. Ever since we got Sonia a new bedroom set she has not been sleeping well.. maybe shes not used to the smell.. new mattress and so forth.. she refuses to sleep in her bedroom (well she usually will wake up in the middle of the night to sleep with us)... except during her afternoon nap.. weird .. i know! After her last milk, she will pretend to close her eyes and when i put her down, she will start to cry.. so in the end my only free time to update my blog (which is after 10pm of cos) is used  to put her back to sleep .. sigh... 



Sooo anyway, yesterday hb was "kind" enough to let me hv the car again.. was out the whole day.. took Sonia to Vivo city to shop for new clothing.. met Lyn for a quick lunch.. I also managed to squeeze a bit of time to go to the florist to get my weekly fresh flowers.. by the time i was done with that it was time for me to fetch hb fm work... time flies too fast and guess what??  i get tired very easily nowadays... even driving makes me feel tired.. i think its the lack of sleep, weather maybe or a sign of old age?? muahahahaa








Whatever it is,  last night i managed to prepare the first part of two long winded cakes.. why long winded?? too many steps lol.. I baked pandan sponge cake and also baked cheesecake (this cheesecake needs to be refrigerated for a night before the next step)



Its a repeat telecast cake for both but since i hv not baked them for almost a year, i thought its high time i make use of my cake ring again.. will load photos (yucky photos - too tired) and recipe of pandan kaya cake first and will do the cheesecake entry tomorrow.. so here goes!







Ingredients for cake:

250 gm. Optima flour or sponge cake mix flour
4 eggs
3 Tbsp. Pandan juice (i used milk)
a little green pandan paste or green colouring (1tsp each)
3 Tbsp. Thick coconut milk
1 1/2 Tbsp. cornoil

Pandan Kaya:

900 ml. Coconut milk (i used 400g KARA, thick coconut cream and add 500g water)
9 Tbsp. Hoen kwee flour / green pea flour (85g)
1 Tbsp. Instant Jelly Powder (ran out of this so i used 1/2 tbsp of jelly powder)
1/2 tsp. salt
a little green colouring
a little pandan paste
180 gm. sugar

60 gm. Dessicated coconut for covering cake (didnt use cos no one likes it)






Method for cake:

(1) Whisk optima flour and eggs till light.
(2) Add pandan juice and continue to beat till fluffy.
(3) Add green colouring and pandan paste.
(4) Fold in coconut milk and corn oil and mix till combined.
(5) Pour into a 9" round cake tin and bake at 175C for about 40 to 45 mins. or till skewer inserted comes out dry.
(6) Slice on wire rack to cool before slicing into 3 or 4 slices , your preference.

Method for pandan Kaya:

(1) Put all the ingredients into a pot and stir till evenly mixed.
(2) Cook over medium heat till mixture thickens and smooth.
(3) Place a slice of sponge cake into a cake ring, pour in some kaya and continue the same process till the last layer is covered with pandan kaya.
(4) Leave aside to cool and set before chilling in the fridge.
(5) Remove cake from cake ring and cover the whole cake with dessicated coconut. (i used hair dryer to blow hot air around cake ring to loosen cake) 
(6) Slice and serve chilled.

Note:
For pandan kaya, i bring to boil, water, sugar and jelly powder. In another bowl i mix coconut cream, salt and hoen kwee flour and stir till mixture smooth. Once combined, i added it to sugar mixture and continue to cook over low heat till mixture thickens and smooth (use hand whisk ok)

No baking photos today as I was too lazy aka not in the mood to bake anything..hmm not really lol.. i did make corn kueh for desert tho.. Mama and Sonia were out and abt during the day.. took her to a bookstore and got her a few books.. I thought for a change i wud put up Sonia's everyday photos.. well its more for Aunt Silvia actually...

Oh did i tell ya that my little Sonia is into electronic gadgets?? u shud see how she uses her Ipod... yes she has her own Ipod mind ya and has lots of educational stuff in her Ipod.. she even knows how to get into her fav video and click on whatever she wants - she can swipe, scroll, tap etc hahahha






She loves to dig in my handbag and look for my reading glasses (yes I am getting there ladies.. the reading glasses.. the body aching... the the the muahahha) so now she has her own sunglasses!
